I think it took about 6 to 8 weeks from the time I inoculated the jars until I could "birth" the cakes into the terrarium.
It only took 3 or 4 days from the time a shroom was a little dude until it was full grown and ready to pick.
I think I packed the substrate into the jars to tightly which caused it to take some time for the fungus to grow throughout the cake. So when you put the substrate into the jar, leave it loose, the mycellium will grow throughout it and hold it all together when you take it out of the jar.
Pinky suggested that I put the vermiculite on the top of the cakes (double casing). They really started to produce when I did this.
