The best way to preserve them in honey is to set the honey.

The key thing is cram as much shrooms into each jar as possible. You need a high shroom to honey ratio. Also try not to cut the shrooms because they will bleed into the honey. Do not heat the honey either. Refridgerate immediately at least until the honey sets. The success of this method varies. The best results I have had are 12 months, and those jars would have probably lasted another 12. The worst results were 3 months.

Drying is a better solution, and only slightly more hassle. Dried they may to all intents and purposes last indefinately. Just like Joan Collins.
