the hypothalamus basically has only one function -- to regulate the internal environment of the body. It receives signals from pain and temperature sensors located throughout the body as well as from internal receptors which measure things like blood pressure, blood osmolarity, and amount of oxygen and CO2. Then it sends out signals to maintain a constant internal environment. It does this by signaling to the sympathetic and parasympathetic nervous system, as well as to the pituitary gland to release hormones.
