Ours is a traditional 6 course Italian meal, that takes 4-6 hours to complete. It's a wonderful and slow way to celebrate the day with our family. The kids eat what they want and go play throughout the day. Menu is:

Salad and Rose wine
Antepasta (Italian coldcuts, chesses, peppers sweet and hot, fish, olives, mushrooms)
Italian Wedding Soup
Pasta (usually shrimp based but varies)
Rib roast and sides
Desserts (always including cannolis)

The trick is not too overeat any one course but to stretch it out and just relax, enjoying the meal and the family. Each of us takes a course, buys it and prepares it and cleans up after then sets the table for the next course. It is even better than getting presents. Merry Christmas, and God bless. lance

You guys are mean. You're making me hungry early!

There's four of us but one neice so things will be good.

Fortunately, I'm the only Swede so there will be very little Scandinavian food this year. The bake goods are wonderful but Swedish Christmas dinners are often "adventurous." Lots of turkey and some eggnog is what I expect.....Or Else!

Here's what we'll be having:

Basic salad (tomato, cucumber, salad)
Tomato-onion salad (my mom's specialty)
Fish (plenty of different kinds)
Roe (brought by my cousin) with cream and onion
Boiled potatoes with dill
Cheese-carrot buns (brought by me, I'll be making them tomorrow)
Turkey
Macaroni& cheese (my specialty, I make it every year now!)
Carrot casserole
Liver casserole
Potato casserole
Rutabaga casserole
Mixed vegetable casserole (brought by my aunt)

Plum quark for dessert

And then comes coffee with (everything made by me):

Cheese trees (salty cookie)
Mint-chocolate cookies
Jam cookies
Star shaped lemon jam cookies
Tiger cookies (they have two doughs, plain & chocolate)
Oatmeal cookies
Gingerbread cookies
Christmas Eve Cake
Christmas Bundt Cake (with dates & glogg, very moist cake)
Mince pie (our version, made with dates & puff pastry)

So this is what we'll be eating Christmas Eve, Christmas Day and as long as everything lasts! Grin

Liver casserole

Porridge recipe:
2,5 dl porridge rice (about 1 cup)
2,5 dl water (1 cup)
1,25 litres of milk

2 teaspoons of butter
half onion

500grams of liver (1 lb)
1 egg
4 teaspoons of syrup
2 desilitres (dl) of raisins
pepper

Make the rice porridge. Then fry the onion with butter. Mix all the other ingredients into porridge.

Divide all the ingredients into oven trays. Put the casseroles into oven for about 1 hour and half, 160 degrees/325 F.

Well, Tarey and I had our Christmas with our children and grandchildren last weekend. We had baked ham, AuGratin potatoes (cheesy potatoes as my granddaughters call them), green beans with almonds, salad with mixed fruit, baked dinner rolls, pumpkin and apple pies.

Everybody's stocking included one apple and one carrot which we hunked up and then walked across the road to feed the horses at the horse farm - my granddaughters will not come to Grandma's house without a walk to see the horsies.

Today, Christmas, it's just Tarey and me, so dinner for us tonight will be Cornish Hens, stuffed with rice/onion/celery/raisin/cinnamon/honey stuffing, steamed asparagus, hot baked bread, salad, apple crumb cake for dessert.

Lordy, am I the only one who still cooks turkey and dressing around here... with all the trimmins.. I'm so darn full I may not eat at all the whole next year... (well at least until lunch today - then it's leftovers - the best part). Got a smoked turkey in the fridge just waiting for a sandwich to be made of it.

And then there's the "left over" dressing and ..... oh heck... my stomach is already hurting again...

You're not the only one, although it wasn't me who did the cooking. My wonderful partner showed off her great cooking skills with turkey and half a dozen vegetables. We didn't even get as far as the xmas pudding which is still to be started!

We've also got a ham sat in the fridge, so whenever anyone feels remotely hungry then can also tuck into a slice of ham (or turkey)...
