If I wish someone a Merry Christmas and they take offense at it, this is their problem, not mine.

If someone wishes me a Happy Ramadan, or Kwanza or the like, I return their wishes by saying "and a Happy Ramadan/Kwanza to you too".  I take no offense whatsoever.

It's not the religion that should be the emphasis on a greeting of "Happy whatever".  It's the genuine  wishing of happiness to the person that counts.
