Title: Pie Recipes - Share if you want. Post by Tiannia on Apr 3rd, 2008, 12:53pm We had a pot luck here at work and I made a Key Lime Pie and was asked for the recipe. I am not a big baker (cooking is a totally different thing) but this recipe was really easy, so I thought I would share here too. Also we where talking and I told them that I had a Sweet Potato Pie that my hubby and kids love and I gave that out too. Key Lime Pie – 1 Graham Cracker Crust (I buy premade, but you can make your own if you like) 2 Eggs 1 14oz. Can of Sweetened Condensed Milk ½ cup Key Lime Juice (Regular lime juice does not work as well) 1 tsp of lime zest – Zest for one small/medium lime Pre-heat oven to 350. Put eggs, milk, key lime juice and zest is a mixer bowl. Blend with an electric mixer on low until the eggs and lime juice are just blended with the milk. Pour into the graham cracker crust. Cook for 20 mins. Pull out and let cool on Counter top. Once cool, Cover with plastic wrap and refrigerate. Cut, top with whipped cream and enjoy. Tips* - Do Not over blend – the lime juice can separate in the refrigerator. - If you want the pie more of less tart, do not use or Add additional lime zest to the pie. Sweet Potato Pie I don’t do crusts, so I buy the premade ones that you can just roll out. They have 2 crusts in the box and the recipe makes 2 pies so it works out well. Before you start (Making the mashed sweet potatoes) – You will need 2 cups of mashed sweet potatoes. I usually boil 3-4 sweet potatoes or yams. Make sure that they are covered with water and add just a tablespoon of sugar to the water. I typically pick the sweet potatoes that are the fatter, bulbous ones. Stick a knife in and if it can go all the way thru the potato and slide right out they are done. Remove from the heat, dump the hot water and cover with cold water until you can handle them. The skin and the stingy laver right under the skin will fall right off. Then I put them in a bowl and whip with an electric hand mixer until smooth. Recipe - 1 stick margarine (4 ounces) softened – Room temperature 2 cups mashed Sweet Potatoes 2 cups Sugar 1 small can evaporated milk 2 pie crusts, unbaked 1 teaspoon vanilla 1 ½ teaspoons cinnamon 1 teaspoon ground ginger ½ teaspoon ground cloves Preheat oven to 350 Mix potatoes, sugar and margarine until completely blended. Add other ingredients and mix until smooth. Place the pie crusts in 2 pie dishes. Form to the pans, you don’t want bubbles In the bottom in the pan. Pour mixture into the crusts. And bake for 1 hour. Check the pie with a knife or tooth pick in the center. When it comes out clean It is done. Remove and let cool. Enjoy. |

Pick a Mrs Smith's or SaraLee pie from the freezer 3. Go home 4. Read and follow directions on the box 5. Eat pie Second (for those days you're in a hurry) 1. Go to bakery 2. Buy pie 3. Go home 4. Eat pie. |

I love Mrs. Smith's Hearty Pumpkin pies. Kroger has an apple-cranberry pie they make sometimes, it's really good. They also have had a good selection of no sugar added pies in their bakery, which I get, they are pretty tasty. You can't even tell the difference. p.s. nani, don't forget the ice cream ;) |

Post by Rosybabe on Apr 4th, 2008, 12:12pm for those who like Flan (custard egg)... 1 can evaporated milk 1 can condensed milk 3 eggs 1 tsp lemon juice 1 tsb vanilla extract 1 creme cheese package 1/3 cup of any liquor you like (amaretto, cointreau, brandy, grand marnier, irish cream) in one metal round pan put 2 tsp of sugar and a little bit of water and heat the sugar until melted. This will be the caramel. Remove from heat. leave the caramel in the pan. Blend the ingredientes together and pour mix into the round pan. Put this pan inside a bigger pan and pour water enough to reach the 1/3 of the outside of the inside pan (this would be like steaming). Cover tightly and let boil in medium low heat for about 1 and half hours or until a knife comes clean . remove the inside pan and let it be in the refrigerator until cold, maybe 4 or 5 hours, once is set, with a knife separate the edges of the flan from the pan and place a big platter in top of the pan and flip it upside down, the flan should come right out. Mmmmmm :P |

My friend's Mom, Mrs. Pinera used to invite me over their house when they had paella for dinner and flan for dessert. She is such a wonderful cook but unfortunately moved back to Puerto Rico. I'll have to try your recipe sometime. Thanks for sharing. |

In this your house we love flan, I just have to stick making it once in a while because of all the calories ;)..it is very rich so a little piece will go a long way to satisfy a sweet tooth :D |
