Easter is here.

Traditionally Finns eat lamb with potatoes and mint sauce. We're going to cook the lamb with herbs and boiled carrots.

My family had the tradition to boil some eggs at Easter's main lunch. I think we'll be doing that this year, too. :)

It's traditional Finnish Easter treat called mämmi and it divides opinions. I dislike it with passion, Timo loves it:

Timo eats mämmi with some milk and sugar. Others, like my parents, prefer to use cream instead of milk and some just add some sugar.

Sanna - Don't take this personally, but that shit looks disgusting!

We're still talking about what we're going to have - either ham or turkey. And if I get any sensation of taste or smell back by then, maybe I can convince my bride to make one of her delicious lemon poppy seed tortes.

Certainly not Mammi. It looks like the stuff I throw away after the primary fermentation of a batch of beer.

Paul my love then you need to come here!

I'm cooking Roast Lamb with onion sauce and also mint sauce (cos I want both!) Roast Potatoes, Mashed potatoes, carrots with grand marnier, The Usual Parsnips LOL (and the last of that maple syrup you bought me in Lake Placid) Asparagus wrapped in bacon and Green Beans a la greque.

For pudding I shall make a trifle 'cos it's traditional in my house.

Saturday night I'm having friends round and I'm cooking Stifado (remember the beef stuff I did at Lisa's) ollowed by Shimali which is a greek cake. I'll be sure and post pictures!

I'm with Brew on that dessert. The description alone is enough to turn me off! I'll stick with my apple pie for dessert.

It's not food, but we have a winter storm warning for Friday of 10-14 inches of snow.

Snow for Thanksgiving, snow for Christmas, snow for Valentine's Day, St. Patrick's Day, and now snow for Easter.
Life in Wisconsin sucks right now.

Ham, cheesy potatoes, some sort of vegetables, and a poppy seed torte for poor Brew.

I think we are having ham with a bunch of sides at my grandpa's.  We are making apple pie for dessert (sounds a lot better than Sanna's dessert!) and sweet potato casserole.  I LOVE SWEET POTATOES!!!!  But if it is warm then we are going to have potato salad instead.  That is good too.
My grandpa and his girlfriend are making everything else...she is an amazing cook!  
mmmmmmmmmmm.
oooh and I need to talk my mom into making some dairy free peanut butter eggs.  Don't know if we have time this year though.

Is that a dessert Sanna?  I won't tell you what I think it looks like but I'd sure like to know what the ingredients are.  NO...not the recipe thank you, just what's in it.   ;)

  We're having dark meat Turkey with gravy, Asparagus with garlic and butter sauce, corn on the cob, red potaoes in olive oil and Italian spices and apple crisp.

From Wikipedia:

Mämmi is made from water, rye flour and powdered rye malt, seasoned with dark molasses, salt and dried, powdered Seville orange peel. The mixture is then allowed to go through a slow, natural sweetening process before being baked in an oven until set. Preparation takes many hours, and after baking the mämmi is stored chilled for 3 to 4 days before being ready to eat. Sometimes mild fermentation can occur during preparation.

I often wonder what the methysergide I take from time to time would do to their pee-pee test. You know, conveniently forget to tell them I'm taking it....

I bought about 20 pounds of fresh and smoked kielbasa at a great Polish grocery store here in Wilmington to take to my family at the beach this weekend but now that those plans have been cancelled, I guess John and I will be having kielbasa and sauerkraut....yummo.

Hey Brew......how would I go about sending kielbasa via FedEx?  My brother is jonesing for some kielbasa and asked if I could ship it to him this weekend.

Does it need to be frozen the whole way, or is it okay in its packaging for a day or two? If the former, you'll have to throw it in an insulated box with a little bit of dry ice. If the latter, sure, just put it in a box along with some packing peanuts.

The dry ice option will cost you a little more cuz it's considered a dangerous good.

I always freeze the kielbasa that I plan on taking downstate as soon as I get it home so it is all now frozen.  I cut the rings into portions and put them in zip lock freezer bags.

Can I get the insulated boxes at a FedEx store?

Now I have to find out where to get some dry ice.....will put this on the "honey do" list this weekend.

My brother, Jim and I have a running joke that I cannot go near his driveway when I visit until I show him the cooler full of kielbasa. :)

No. They might have them at Kinko's, but I'm not sure. I always make my own. Go to Home Depot and buy some big sheets of one-inch styrofoam and cut 'em to fit all six sides inside the box.

Cut styrofoam???  The sound of squeaking styrofoam to me is like nails on a chalkboard to most people...it drives me crazy.  John just got one more chore added to the honey-do list.

Cyn - cut it with an electric knife - 3 times faster and not nearly that god awful noise!

Last Year Bill and Pat sent me some Culvers frozen custard like that.  It got to me in very warm California as frozen as it could be Cyn.

 Okey-dokey...Not to make fun of your cultural foods Sanna...but yuck!   No wonder you thought it looked like something in the bottom of your beer while brewing Bill.

On the other side of the coin though Sanna you could probably not stand some of the things we eat here either.

grits, collard greens, creamed spinich, tofu wrapped in kelp, Dandelion tea, cotton candy, hot dogs, sweet potato/pumpkin pie..etc.       lol

I actually hate mämmi... I've eaten it as a child, but not since then. I understand very well how people consider it to be discusting based on what it looks like. ;;D

But Timo and many other Finns like it a lot. If Timo would have his way, we'd fill our freezer with frozem mämmi boxes, so that he could eat it all year round... No thanks!

Back in here some magazines actually arrange mämmi tastings for tourists! It's intresting to see the look on their faces as you can imagine! ;) But usually, the result is pretty much the same than with Finns: some like it a lot, some dislike it a lot.

I actually took a tiny box of mämmi to my former landlady. She took the box and tried it, but for some reason I never heard what she thought about it... ;) I gave her mämmi, because she was very keen on trying different foods and desserts. Otherwise, no worries, I won't be serving it!

I've eaten cotton candy back here; it's bit too sugary to my liking. The hot dogs I've had in here have been nice as well.

Sweet potato is not used that much in here, so I haven't really tried that one. I generally like all the vegetables, so I think I'd like it.

And what comes to pumpkin... I've always wanted to try pumpkin pie! Back at junior high we did get pumpkin amoung some salads and I liked it. :)

I have more styrofoam packing boxes and ice packs for shipping then I know what to do with!! Lisa gets an allergy med shipped once a month shippped in them. But then again, if you were coming down here there would be no need to get them to you. Have a nice dinner, hope to see you soon. The wind is still blowing! It better not snow!

The beef is cooking now, the smell is like Heven

Roast Beef, Roast potoes (shaken in semolina) yorkshire puddings, Mashed sweet potatoes(with butter and black pepper) , roasted parsnips, Roasted Butternut Squash, Cauilflower cheese, and for the ones in my house with no taste Brussel sprouts

Helen what is this onion sauce? you have mentioned that a few times, it sounds good, how do you make it.

I tried Grits once - yuck, what is it?

Tanya when I was little my mum ALWAYS cooked onion sauce with lamb. I love it with a lot of things though, not just lamb!

I fry a couple of onions until just transparent and thenjust make a basic white sauce, you know, flour and butter roux and then add milk.
Before returning itto the heat to thicken it I add the onions (I like ALOT!) and some celery salt and pepper. (No ordinary salt) and then stir while it thickens and thats it!

I love it with brussels but then when I cook brussels I use a little chicken stock (knorr stock cube!) and boil them lightly and then saute them with some diced onion and bacon and they are just gorgeous. So much so my kids BEG me to make them LOL

I'm thinking about cauliflower cheese for sunday too - simply because I love it!

It won't be matzo this year....
We always go to Jo's family for easter and we get stuck not being able to eat so we bring our own kosher for passover food....

This year we shall indulge in whatever they cook... No doubt an awesome Italian feast :D

Oooh Eric I love matzo's! I had a friend who was Jewish when I was about 18-19 and I used to love staying at her house. We had matzo's and the most amazing cherry jam I've ever had for breakfast.. I still dream about that jam LOL

I still don't know what I am going to do  :(...lamb sounds good..maybe and irish stew, Hubby has been begging for one  ;)...the only thing I am sure of is the carrot cake! Yummy!  :D

I adore carrot cake, it's my favourite cake of all. I've made a malibu and coconut cake and I'm in the middle of making a lemon layer cake then its onto sausage rolls and bacon puffs. I'm having a whale of a time I'm telling you! I'm damned and determined that whatever else I make NOTHING I make will have chocolate in it. There's enough of that in the bloody eggs and as most of you know, I really do NOT like chocolate!  ;;D

Helen, that lemon layer cake sounds delicious! Any chance we'll we seeing a pic of that once it's ready? :)

Brussel sprouts... now that's the only vegetable I've met which I don't like. Well, I disliked how my mother made it, anyway. Them and bacon... that could work for me. ;)

I am not going to post pics of my carrot cake!  ;;D no way!!  ;;D My daughter is going to decorate it herself!!! ;;D ;;D ;;D...she got some chicken peeps and some sprinkles and pixie dust (colored sugar)  ::)..who knows how that cake would look like when she finishes with it  :D..but I won't look at it when I eat it, I will close my eyes  8) and just enjoy the taste  ;)

Rosy, it's wonderful that you let your daughter decorate the cake! :) My mom let me "help" when I was very young and all that "helping" turned into cooking & baking passion. Decorating cakes, especially birthday cakes, was a favourite of mine! :)

I'm cooking a spiral sliced ham to take to lunch / dinner at the great grandma's while the kids (mine and their step cousins)  are shooting with Grandpa and Shaun.  

We will hard boil eggs and I'll make creamed eggs and biscuits for breakfast.  Think of a really rich white country gravy with sausage and you slice the hard boiled eggs in.  It is sssoooo good.

I'm completely with Sanna. My love for baking also came from being encouraged as a child. My family ate my asst. color cupcakes one Easter. They were purple and blue and every color I could think of, the darker the better and the more color variety , even better, and of course with jelly beans on top. Please post your cake when she's done!!! Easter is such a fun time for kids and creativety.

Dinner is over………. lots of snow out the window……
the fireplace is lit….. and Jazz music playing in the dinning room

for the real stuff: Milk lamb Provencal, with a touch of Pernod
asparagus a la campagny, baby potatoes with rosmarin
fresh strawberries with crème and fresh mango….. at the fireplace a cheese platter (gruyere, Vachrain Mont d’Or, Appenzeller) with bugget...
Mocca (Ethiopian / Colombia mix) or white tea - for me.

Sat. B/F eggs muffins and different marmelades…..

Sat. night…. only real stuff – Steak! (beef from local meat) aged 4 weeks in air (chilled) no need for condiments!
dessert Austrian “Kaiserschmarren” (look it up in wiki)

Sunday we are out for Brunch…..


Light Dinner…..


Monday…. if there is room left (most likely will)
Cheese Foundue sounds good…..

(all subject to changes)

Eric…. we have about a month, and I look forward for
Gefillte fish….. somewhat sweet served with fresh graded horseradish….

But that should be a different thread….April 19th it should be…

Sunday afternoon we are going to the nature park and have a nice time and we are taking chicken and coleslaw and some baked beans, and some soft drinks and we are going to forget about all the stuff that has had us bogged down.

thanks for the Onion sauce recipe it sounds easy enough,  I will try it next week, I have two vegetarians to feed so the recipe for Brussel sprouts is a no go,also I don't think anything could make them taste better, in my granddaughters  words "YUCK"

Your weekend selection sounds really good, just change the JAZZ though, I am not so keen on that, the cheese board sounds to die for

Lent is nearly over I cannot wait for my Easter egg/s on Sunday.  I cannot belive I have gone so long with no chocolate
