Title: Re: Need a recipe please Post by Annette on Feb 13th, 2008, 4:24am This is my favourite :) Asparagus and Crab Meat Soup Recipe By : Traditional Vietnamese recipe with French influence Serve 4 Ingredient -------- ------------ -------------------------------- 4 cups Chicken broth 1 tablespoon Plus 2 teaspoons fish sauce 1/2 teaspoon Sugar 1/4 teaspoon Salt 1 tablespoon Vegetable oil 6 Shallots -- chopped 2 Garlic cloves -- chopped 8 Ounces lump crab meat -- its best to use fresh crabmeat by boiling the crabs and pick the flesh out yourself, but if you are lazy you can buy frozen or tinned crabmeat, doesnt taste quite as good though. Freshly ground black pepper 2 tablespoons Cornstarch or arrowroot -- mixed with 2 tablespoons Cold water 1 Egg white-- lightly beaten 15 ounces White asparagus spears * 1 tablespoon Shredded coriander * cut into 1-inch sections with canning liquid reserved This soup was probably created by some homesick Frenchman. White asparagus (a French import), packed in jars or cans, is used for this recipe. If white asparagus is unavailable, use frozen or fresh asparagus (in this case, add the fresh asparagus to the broth from the very beginning and cook until tender, before adding the remaining ingredients). Combine the broth, 1 tablespoon of the fish sauce, the sugar and salt in a 3 quart soup pot. Bring to a boil. Reduce the heat and simmer. Meanwhile, heat the oil in a skillet. Add the shallots and garlic and stir-fry until aromatic. Add the crab meat, the remaining 2 teaspoons fish sauce and black pepper to taste. Stirfry over high heat for 1 minute. Set aside. Bring the soup to a boil. Add the cornstarch mixture and stir gently until the soup thickens and is clear. While the soup is actively boiling, add the egg and stir gently. Continue to stir for about 1 minute. Add the crab meat mixture and asparagus with its canning liquid; cook gently until heated through. Transfer the soup to a heated tureen. Sprinkle on the coriander and freshly ground black pepper. BON APPETIT :) |

Title: Re: Need a recipe please Post by Batch on Feb 13th, 2008, 4:50am Tony, Wash, snap, and season a fist full of aparagus with a little lemon herb seasoning then add a few TBS of water and splash of olive oil. Roll gently in a covered microwave container. Nuc the asparagus just long enough (1 to 2 minutes max) to green up and heat the spears but not long enough make them lose their crunchy crispness. Plate up hot and serve asap. You can drizzel with a little Paul Newman's Creamy Ceasar salad dressing for a quick faux Hollandase topping. You can also chill then top with a little Gazebo Room Greek salad dressing. It's good to see you're feeling better and able to use a keyboard... Take care, V/R, Batch |

Title: Re: Need a recipe please Post by BarbaraD on Feb 13th, 2008, 7:18am Coat with olive oil - sprinkle with garlic (powder or salt) and whatever other seasoning you like (I use onion powder, cilantro, and some other "secret ingregredients). Place on a cookie sheet and then in a 450-500 oven for about 5-7 minutes (uncovered). UMMM UMM Good!!!! You can serve them as a veggie dish or cut them up and put them on top of a salad or just grab them off the cookie sheet (wait till they cool or this could be a problem). But we never have any left over here and NO ONE like asparagus. Hugs BD |

Title: Re: Need a recipe please Post by brewcrew on Feb 13th, 2008, 7:57am Helpful hint: Use a potato peeler to peel the skin off the bottom few inches when the asparagus has been harvested too late. This gets rid of the overly fibrous material that usually renders those last couple of inches inedible. Unless you like chewing on it for ten minutes. |

Title: Re: Need a recipe please Post by Gator on Feb 13th, 2008, 8:07am We do something very similar, Barb. Put olive oil on a cookie sheet, sprinkle a little salt, a little garlic powder and a little cayenne pepper. Add the asparagus and a handful of pecans and roll them around in the mixture to lightly coat everything. Cook in the broiler uncovered for about five to seven minutes. Even my kids who crinkle their noses at the mention of asparagus eat this. Yum! |

Title: Re: Need a recipe please Post by thomas on Feb 13th, 2008, 8:59am My favorite way to eat it is steamed and served with steak. I also have been known to add it to my marinara for a wonderfuly surprising tasty adventure. |

Title: Re: Need a recipe please Post by Melissa on Feb 13th, 2008, 9:17am I like to eat it raw or like the others, with the olive oil, salt, pepper, garlic, but then grilled. |

Title: Re: Need a recipe please Post by DennisM1045 on Feb 13th, 2008, 4:25pm Here you go Nani. WARNING: This is one of those recipes that my wife heard from Giada. She heard it and then made it her own. In her typical pinch of this and dash of that style she tweaks the ingredients as she goes. No dish every tastes the same twice ;) Sorry, no pics this time Cook 1 1/2lbs of Penne as directed and save 2 cups of pasta water Boil 2 bunches of Asparagus still tied for 5 minutes Cut Asparagus into 1/2 inch lengths Put 4-5tbs of olive oil in a pot Add 3 cloves of minced garlic Cook garlic on slow heat for 2-3 minutes - don't burn it Cube 1/2-3/4lb of smoked Mozzarela cheese Toss Penne, Asparagus and Mozzarella in with enough pasta water to make sure the pasta isn't sticky Serve with fresh grated Romano cheese Enjoy! -Andrea- (Still Dennis' better half) |

Title: Re: Need a recipe please Post by nani on Feb 13th, 2008, 7:14pm That sounds great, Dennis, thanks... :) Andrea sounds like a great cook (great cooks don't need no steenkin' measurements). At my house, Giada is known as "spageeeti girl". I grew up with Italians and never heard one say "spageeeti", LOL. She kinda bugs me so the hubs watches her and reports good sounding stuff. I'll be eating this soon. |

Title: Re: Need a recipe please Post by DennisM1045 on Feb 13th, 2008, 7:43pm I hope you like it Nani. I know I did :) She's a great cook. The proof is in the BMI numbers I posted in the "Are you malnourished" thread ;) -Dennis- |

It's as easy as going to the grocery store, washing it, cutting about half an inch off the base, steaming it for a few minutes, and putting some butter and salt on it. Or use one of the above delicious-looking recipes. Not seeing the ocean is one thing. This one - you have complete control. |

From Wikipedia: "Some of the constituents of asparagus are metabolized and excreted in the urine, giving it a distinctive smell. This is due to various sulfur-containing degradation products (e.g. thiols and thioesters) and ammonia. Recent studies suggest that every individual produces the odorous compounds upon eating, but that only about 40% of individuals have the genes required to smell them. The speed of onset of urine smell is rapid, and has been estimated to occur within 15-30 minutes from ingestion." For example, my bride can smell it. I cannot. |

Best way first time round, Woobs, is to steam it for two or three minutes, drop it into iced water, then eat it with a little salted butter. It's not everyone's taste but well worth a try. |

The pee thing is pretty interesting. I almost wish I could detect it. I'm not sure why you would be scared to try it. It's food, it's good for you, and many people love the taste and texture. I do. But don't deny yourself the opportunity. What's the worst that could happen? You don't like it. |
