Title: Re: I Have A CONFESSION to make...... Post by kayarr on Feb 7th, 2008, 9:08pm Lobster is a lot like crawfish. Have you had them? Neither of them is fishy and chowder is quite delightful if make correctly. (I am a cheap (*thrifty*) woman so I would rather catch the crawfish and cook them then pay as much as I'd have to to buy a lobster) |

Title: Re: I Have A CONFESSION to make...... Post by DonnaH_again on Feb 7th, 2008, 9:54pm There's lobster and then there's LOBSTER. What you get down here in and from Florida is rather tasteless and certainly not sweet. I only order when the menu says "Maine lobster". Then....oh heaven. The steamed little neck clams down here are something to die for tho! Any of you ever have a clam bake? I mean in a huge steamer with layers of corn, chicken, clams, sweet potatoes? We used to have them regularly in Ohio, but you can't even rent a steamer let alone buy a one down here. My mouth is watering. |

Title: Re: I Have A CONFESSION to make...... Post by chewy on Feb 7th, 2008, 9:57pm Florida lobsta is rock lobsta. Kind of stringy for my taste. We have clam bakes and boils all summer long. |

||
Title: Re: I Have A CONFESSION to make...... Post by kayarr on Feb 7th, 2008, 10:57pm The claws are edible and the tail is too. There is a little waste when you boil them yourselves so the price is less. Not to mention the labor that goes into cooking and cleaning. You should have a store in town with a live lobster tank that you can go pick out dinner:) |

Any and every type of Seafood dish you could ask for. From Fish and Chips, Fried Clam strips, calamari, to lobster tails and king crab legs. Fresh sushi, and a Mongolian grill that had octopus, shrimp, anything you could imagine, yummy, now my tummy is growling. Rosy, I have never eaten that though. Title: Re: I Have A CONFESSION to make...... Post by Ray on Feb 8th, 2008, 1:25pm Poor Woobie! I used to spend all my summers at the Jersey shore, on an 18 mile long barrier island, called Surf City. I used to fish, crab, even clam (cherrystone clams). We would have lobster a couple of times during a summer, yummy! For a couple of years, in college, I spent my summers working as a seafood cook and prep person. Now, I'm about 550 miles from the ocean in the mid west, and seafood here is -- shall we say -- lousy. Once you've had seafood that was in the water only hours before, you can't enjoy the frozen stuff. wah wah wah :'( Ok I'm done. Wish best wishes, Ray |

Title: Re: I Have A CONFESSION to make...... Post by George_J on Feb 8th, 2008, 7:08pm Mmmmm. Seafood. My great weakness. I love Maine lobster, but I don't get it often. I think it's best at the source...you can get live lobster 'most anywhere, but it's not the same. Crawfish etoufe', I've had in Louisiana, at a restaurant near Breaux Bridge--splendid stuff. We were enjoying some one day, along with some turtle soup, when another couple came in, looked at the menu, and left. Our waitress--an old Cajun lady--shook her head, laughed, and said, "Down the street to Burger King". We get to the Oregon coast a little more often--when we're there, we make a point of scoring a few Dungeness crabs for boiling, and some mussels to steam in beer, butter, and garlic. Very nice. I always make a fish chowder when we're there with fresh-caught Ling-cod. Cabezon makes good chowder as well--Rockfish seems to be a little too soft. Ellen loves this stuff: 2 lbs. Cabezon or Ling-cod filets. True cod works well, too, for you east-coasters. 1/2 pound salt pork, rind removed, and cut into small cubes 1 onion, chopped 10 medium potatoes, cubed 1 quart water 1 cup boiling water (separate) 1 cup heavy cream 1 tablespoon chopped, fresh parsley 2 tablespoons butter 1 pinch saffron 1 teaspoon salt 1/2 teaspoon fresh-ground pepper Saute' the cubed salt pork, slowly, until golden brown. Add onion, and saute until soft. Add 1 quart water, heat until boiling. Reduce heat to medium, add cubed potatoes salt, and pepper, and heat until bubbling. Cover, and cook ten minutes. Add fish, heat until bubbling, cover and cook approximately ten minutes--until fish breaks apart, and translucence is lost. In a teacup, pour 1 cup boiling water, add saffron, and steep five minutes while the fish is cooking--the scent of the saffron will bloom out while you're finishing things up. I like that. Reduce heat to low, add 1 cup heavy cream, 1 tablespoon chopped fresh parsley, and just heat through. Add the cup of hot water with saffron, and melt the two tablespoons of butter into the hot chowder. Serve with fresh-ground pepper to taste. It's not heart-healthy, I suppose, but it sure is good. Best, George |

Too right they do, Woobs. We have a variety here in Oz called a Moreton Bay bug and it's exquisite. Very rich and succulent and a taste all of it's own. http://en.wikipedia.org/wiki/Moreton_Bay_bug Best simply boiled and chilled then eaten in huge quantities with a bucket of neat Ouzo and lots of beer. Otherwise they can be barbequed or cooked underground like Artonio describes which is known in these parts a cabamouri or kup maree. |

And that's quite right for large shell-fish but the Moreton Bay bug is small by comparison and quite flat. Just add heaps of salt to the water along with a sqeeze of lemon and a bit of brown sugar. As to bi-valves, chuck 'em on the barbie until the shells open (about three seconds) then throw them straight into a bucket of water. Bit of a wash leaving the meat attached then fill the bottom of the shell with a mixture of melted butter, garlic, lemon juice and finely chopped parsely. Put them back on the BBQ plate until the sauce just starts to boil and they make an excellent side dish to a carton of chilled beer |
