I've been to Norway, twice, and didn't see either one of those served to tables near me... Goat cheese, yes.

Svenn, not being a "worldly man" I must ask.... would it be considered proper dining etiquette to suck the eyeballs out of the sockets? Of course my pinkies will be extended during this.

Smalahovud is sheep's head, which is burnt, salted and then boiled. They eat meat from the cheek, can eat both the tongue and the eyes.

I think we eat in Mexico also the sheep's cheek but we never put in the table the whole thing, just the meat...now I know why  :P..in mexico is called Barbacoa.

Svenn.......isn't this also popular in Sicily?  I had a friend from there and I know they considered the eyeballs a delicacy, but i don't rememer if it was from sheep or another animal.

But tongue is a Christmas tradition!  mmmmmm beef tongue....  *sigh* too bad the full recipe died with Dad - although my brother is improving at the traditional cooking of the tongue (beef because sheep aren't exactly a highly accessible animal at the grocerers or butchers in Canada)  My brother hasn't mastered the part of the preparation that calls for you to walk around licking people with it prior to it being skinned though...  once it's cooked and served you can't tell what it is when it's sliced on a platter, and everyone would eat it and rave about how tender the roast beef was and want to know what cut it was.... and then of course the mutton and haggis - we originate from Scotland and on my grandmothers side from Norway so we combined things hehe.


You can keep the eyeballs though.
