Title: Ever stuffed a shrimp?

I got some big shrimp and I'm thinking of stuffing them with crabcake, then grilling them and serving them in a garlic butter sauce.

I'm allergic to shellfish so I have no idea how it'll taste (to Darryl and Hannah)

I guess my next question would be which way to slice them:     the inside   -->  )       or the outside  -->  (  ?

They sound wonderful but Jen - can you actually handle shellfish without running into a problem?

My grandson is allergic to shellfish and he is apparently to stay completely clear of them.

Please don't do something that could trigger a problem for you.

Yep, can handle 'em, just can't eat them or kiss Darryl after he does.  Even being extra careful and washing my hands a bajillion times, I can still feel my lips and tongue tingling if any of it touches my mouth  .....

Jen,

To stuff a large shrimp, I believe you cut it from the outside, at least that's how I did it.  

However, that being said.  I stuffed shrimp one time, and decided I wouldn't do that again.  Too messy, the stuff still doesn't stay in and you lose all the good crabcake down the grill, leaving you with a cut open shrimp.  In my opinion, just grill the shrimp, throw some good crabcakes on the grill separately, and serve!

Among my other previous talents....

I was a seafood cook.  You start by getting the largest shrimp you can, shell and devein them.  Then take a sharp knife and cut them from the outside so it makes like a butterfly wing.

You will NEVER get the contents to stay in there if you use the grill.  You must bake/steam/broil them.  The best way to do this is to take the prepared shrimp and put it in a disposable aluminum pie pan.  Pour an ounce and a half of melted butter over the shrimps, and add about 2-3 ounces of water to the pan.  Cover tightly with aluminum foil.  Bake them the recommended time and temperature in the oven.  It will bake and steam.  Just before serving, set the oven to broil and careful to avoid steam burns, remove the foil.  Put back in for about 5 minutes to broil.

I'm like you Jen,

I can handle the shrimp, but can't eat it, or kiss someone who has.  

I grilled pork tenderloin steaks tonight.  Yummy.

thanks for all the suggestions :)   Sandy, I ended up grilling the shrimp with a glaze of Jamiacan Jerk Sauce and Duck Sauce and panfried the crabcakes and served with broccoli.  They loved 'em.

Ray, one of Hannah's friends is a chef too and he said the same:  stuff, bake, then broil. Next time around, I'll give that a go.

I had tilapia and asparagus and my son had steak and broccoli. We all devoured a HUGE garden salad and the troops are full, fat and happy.

I stuff shrimp.... it ain't easy but the results are worth it.

I take Jalapeno peppers, carve little spear shapes and stuff the deveined shrimp with it, then wrap with half a strip of bacon, put them all on skewers... fantastic.

This is a must have staple food for our tailgate sessions.

I mean...do you broil the shrimp so it's cooked, then after removing foil, put stuffing contents on and broil?

I am so hungry reading this post!!  And in the mood for seafood now...I'd really like to learn how to make this.  Thanks!   Jalapeno and bacon sounds wonderful too!

You do all the prep work, including the filling before cooking.  We used to stuff with a mushroom mixture with seasonings, shallots, and a white sauce base.  Also we used crab imperial.

The key with the cooking of stuffed shrimp is that you can't handle the shrimp while cooking it, or the filling will fall out.

It's been a while since I've done this for a living, I was about 19 when I was a cook/food prep person at the seafood place.  Now 30 years later, I can still cook, but living in the midwest, seafood is not tops on the hit parade.

BTW, Timo and I have been wondering about the crab cakes for a long, long time. We can't get those from Finland. So, the next time someone has those, can you take a picture and show us? :)
