Onion Salad 4-5 onions - not mild onions 1 cup of lemon juice 2-3 tomatoes 1/4 cucumber (outside only) large handful of coriander or flat leaf parsley Chop the onions in half and then slice as finely as you can. Cut the tomatoes in half, scoop out the seeds and discard and dice into tiny squares about 1/6- 1/8 inch. Slice the cucumber skin and about a quarter inch of flesh and dice as tomatoes (you can use the middle but you won't have any colour from it. Chop the herbs roughly and mix everything together in a dish with the lemon juice, cover it with wrap and leave to marinate for an hour or two just giving it a shake every so often. We have it with poppadoms but you could use tortilla chips or pitta or whatever you like - its all about enjoying it not being correct! (Paul just said it's all about oral gratification... ::) ) |
