Post by taraann on Dec 7th, 2005, 8:24am
I am baaaaccckk ;)  I spent a year and a half in WV and things just kept getting worse and worse.   Now I am back in New Hampshire, to stay.  What a long story it is.  This is the first chance I've had to get online since May.  Missed it here and all of you!!!

Glad I'm remembered ;)  Sam is good and the kids are thrilled to have their grammy again.  As for my sister, she is in WV.....she is part of the "long story" She is supposedly coming back to NH sometime this week but I don't know.

I'm all up for recipes Helen,  did you give me the apple struedel muffin recipe, or did I get that somewhere else?  Cause if not it's an excellent recipe if you want it!  Oh and yeah my email is the same.

I'll post pics of my kids asap, you won't believe how big they have gotten.  Oh and I don't know if anybody saw how I looked before, but I have lost a ton of weight.  I just gotta brag a little....all in all I have lost atleast 150 lbs!  I went from the largest pant size walmart had to a size 9.  Wooohooo

Yeah and as for the frozen north....I'm freezing my ass off!

Oh and as for my head....it has been behaving rather well  (((knock on wood)))  I'm not on any meds either.....only get hit mildly, very low kip a couple times a week and it seems that only once or twice a month I get a medium to high kip.  It's been awesome!!!

Apple Struedel Muffins

Notes-----I added 1/2 cup unsweetened applesauce to the batter to make them more moist...also added cinnamon and nutmeg to the batter....the amount to add depends on your individual taste.

INGREDIENTS:
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup margarine or butter
1 cup white sugar
2 eggs
1 1/4 teaspoons vanilla
1 1/2 - 2 cups chopped apples
1/3 cup packed brown sugar
1 tablespoon all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon margarine or butter

DIRECTIONS-Preheat oven to 375 degrees F (190 degrees C). Grease a 12 cup muffin pan.
In a medium bowl, mix flour, baking powder, baking soda and salt.
In a large bowl, beat together butter, sugar and eggs until smooth. Mix in vanilla. Stir in apples, and gradually blend in the flour mixture. Spoon the mixture into the prepared muffin pan.
In a small bowl, mix brown sugar, flour and cinnamon. Cut in butter until mixture is like coarse crumbs. Sprinkle over tops of mixture in muffin pan.
Bake 20 minutes in the preheated oven, or until a toothpick inserted in the center of a muffin comes out clean. Allow to sit 5 minutes before removing muffins from pan. Cool on a wire rack.

Prep Time:20 Minutes
Cook Time:20 Minutes
Ready In:1 Hour
Servings:12

thanks for the congrats and back at ya for the 30-40...thats an awesome start....BUT #1 is the no eating is only gonna make the weight come back EVERY time!  For me usually the weight would come back with a few more pounds added.  Well I have been slooooowwwwllllyyy losing it for a few years now.  But this last year is when most of it just flew off (so it seems)  No secrets no diets.  Just really really cut down on sweets and snacks and second servings.  I really portioned myself alot.  I kept making my servings a little smaller and smaller over time.  Stopped eating BEFORE I was full.  Which was a difficult thing for me.  I used to just eat until I was STUFFED so learning when I was satisfied was actually harder than it sounds.  I started walking alot.  Started drinking more fluids (not soda), esp. when I felt like munching I would have a drink first then have a small snack if I was still  hungry.  I'm not sure exactly what else can explain my weight loss.  I think the fact that I've been pretty much med free for over a year now helped too.  And the things that are my favorites but I know are fattening I didn't cut out...I just limited them.  I think taking away all favs just creates too much temptation to eat it and eat more of it when you do.  My mother in law thinks the fact that my life has been sooooo stressful lately has "helped" me lose weight too, but I'm not so sure cause in the past stress used to cause me to gain weight.

Ya know the funny thing is I knew I lost some weight....and that my pants all fell off me... but I didn't realized how drastic it was until I came back here to NH and everyone was shocked at how "good" i looked...And when my skinny mother in law started givingme hand me downs I still didn't realize until I put on some size 9 and they fit no problem.

Yah...kids are gonna be thrilled with all the snow today... no snow clothes yet though!  Gonna have to dress them  in a million layers or they will drive me nuts wanting to go out and play.  I'm definately NOT thrilled lol

I'm in Bristol right now...in the lakes region.  Looking for a house or apartment somewhere in this area.  Where in NH are you Rori?

My son is doing really well now.  His speech has vastly improved and he is almost caught up to his age group.  I'm going to get him evaluated again before spring to see just where he stands.
