I love Puppychow, just made some for Thanksgiving.

One of my all time favorite cookies is "No bake" cookies.  Those are awesome.

The list you have going looks great.

Are you sending out any care packages?   ;)

I have to  ask:  What's puppychow?

a definite 'must-have' christmas treat with my kids: date nut chewies.
they're little chewy cookies with (what else?) chopped dates and walnuts or pecans, baked, rolled into balls while still really hot, then rolled in powdered sugar.

really yummy!

Puppychow is rice chex, with melted peanut butter and chocolate chips over it, then shaken in powdered sugar.

Gravy Train is better. You can get a big bag cheap, feeds the entire visiting family, and they will never know the differance.

PLUS you can use the spare gravy on the mashed taters.

One of my childhood Christmas cookie memories is of a butter cookie with hazelnuts.  Found one recipe (http://southernfood.about.com/od/buttercookies/r/bl30513v.htm)
which looks pretty similar. ;;D

We don't have Christmas cookies....I'm Jewish, however on Hanukkah we make Sufganiyot (Jelly Doughnuts)

Sufganiyot (Jelly Doughnuts)

1 tablespoon dry yeast
2 tablespoon sugar
2 tablespoons powdered sugar
3/4 cup lukewarm milk (or water, if you want to eat them after a meat meal)
2 1/2 cups flour
Pinch of salt
1 teaspoon cinnamon
2 eggs, separated
2 tablespoon butter (or pareve margarine)
Apricot, strawberry or some type of preserves
Sugar
Vegetable oil

Mix yeast, 2 tablespoons sugar and milk. Let sit until bubbly. Sift flour and mix in remaining sugar, salt, cinnamon, egg yolks and yeast mixture. Knead dough until it forms a ball. Add butter or margarine and knead until butter is well absorbed. Cover with a towel and let rise overnight in the refrigerator.

The next day, roll out the dough to a thickness of 1/8 inch. Cut dough into 24 rounds with a juice glass or other object about 2 inches in diameter. Place half a teaspoon of preserves in the center of 12 rounds. Top with the other 12. Press down at edges, sealing with egg whites. Crimping with the thumb and second finger is best. Let rise for about 30 minutes.

Heat 2 inches of oil to about 375 degrees F. Drop the doughnuts into the hot oil, about five at a time. Turn to brown on both sides. Drain on paper towels, then roll in powdered sugar.

;;D

Goodness Me! You ladies are so energetic and creative! I'm afraid I wouldn't know where to start baking any sort of cookie, let alone any of the above-mentioned.

Down here we have Rum Balls (very yummy - especially if made with real rum rather than rum-essence - and this from someoneone who can't stand the smell of rum!), and a super-sweet confection known as "White Christmas", which is a noughat filled with chopped glace cherries and nuts. Have never attempted to make either.

Years ago when I was living in Turkey - I remember being treated to Ginger cookies in the shape of Christmas trees. They were delicious and I think they were a traditional Scandinavian treat? If anyone has the recipe it would be much appreciated, I'll hand it on to the family confectioner (Brian!!!)

Happy Baking!

Denny

All the Swedish ladies here in my town make these things. Wonderful stuff:

Swedish Spritz (Spritsar) Cookies
Categories: Cookies | Christmas

Serves: 96 Servings  :o

Ingredients:
2 c Sifted all-purpose flour
2 Egg yolks
1 ts Almond extract
3/4 c Sugar
1 c Butter

Instructions:
Sift together flour and sugar onto bread board. Make a well in center and
into this drop egg yolks, butter and extract.

Mix into a smooth dough with finger tips. Force through cookie press onto
ungreased cookie sheets in O and S shapes.

Bake in moderate oven (375) 8 to 10 minutes.

Yield: 8 dozen spritz.

(Note: Store cookies in air-tight container. You may want to let them sit
a day to "ripen" the almond flavor!)

Uh....96 is a bit much though.

If you do it right you get "points" on them. I could never quite do it though

Swedes know how to make heart-unhealthy foods.

Melly you need to share those recipes please!
One of the best bits of Christmas Eve for me is making cookies (or biscuits as we call them) to leave out for Santa. Even the flaming birds wouldn't eat them after MY kids have had their paws in the dough but its one of the most fun hours of the whole Christmas period for me.

Puppy Chow
1 stick butter
1 c. chocolate chips
1/2 c. peanut butter
8 c. Rice Chex
2 c. powdered sugar

Melt butter.  Add chocolate chips and then peanut butter; stir until smooth.  Pour over Rice Chex and mix well.  Put powdered sugar in bag.  Add cereal and shake until pieces are well coated.  Cool and store.

Peanut Blossoms
3 1/2 c. sifted flour
1 c. sugar
1 c. brown sugar
2 eggs
2 tsp. soda
1 tsp. salt
1 c. butter or margarine
1 c. peanut butter
2 tsp. vanilla
1/4 c. milk
Chocolate stars

Sift flour, soda and salt together.  Cream butter and peanut butter.  Gradually add sugar, eggs, vanilla and milk.  Add dry ingredients gradually.  Shape dough into balls.  Roll balls in sugar and bake on an ungreased cookie sheet for 10 minutes at 375 degrees.  Remove and press chocolate stars on top.  Press firmly so that cookie cracks.

Pumpkin Cookies (I just made these, they're AWESOME)
1 c. sugar
1 c. brown sugar
1 c. shortening
4 eggs
1 can of pumpkin
4 c. flour
2 tsp. baking powder
2 tsp. cinnamon
1 tsp. nutmeg
1 tsp. salt
2 tsp. soda
2 tsp. vanilla
1 or 2 c. nuts (optional)

Bake at 375 degrees for 12 minutes.  Drop cookies (heap full for small cookies or 1 tablespoon for larger cookies).  I get 6 dozen.  Suppose to get 8 dozen smaller ones.

You can also spread these with cream cheese frosting.  Here's the recipe:

1 tbsp. vanilla
1 lb. powdered sugar
1 stick oleo
8 oz. cream cheese

Beat until smooth.

Thanks for the recipe, Jas. Have just added Ginger & Golden Syrup to my "Mainland" shopping list.

This time next week we'll have been back in "civilization" for a whole twenty-four hours.

We'll be gone for two and a half weeks - most of that travelling. There's a lot of ground to cover catching up with family. Computer access will be fairly sporadic, so you'll only be hearing from us as and when.

Important date! Dec 12 is Brian's birthday. He hits the big 50! We'll be celebrating with his Mum in Maryborough (Qld).

Back to Dauan Is. for Christmas. Hopefully, I'll be able to let you know how Ginger Cookies go down with the locals.

Johhny, get your mind out of the gutter!!!

ANZAC stands for Australian and New Zealand Army Corps.  Here's something different for you, very Australian, with a rich history dating back to our men fighting overseas in WW1.  Recipe compliments of ABC-Oz.

ANZAC Biscuits

Serves About 20 cookies

Degree of difficulty: Low

Preparation Time: 10 minutes

Cooking Time: 20 minutes

You need:
1 cup rolled oats
½ cup plain flour
½ cup self raising flour
1 cup sugar
¾ desicated coconut(optional)
125g butter
2 tablespoons of golden syrup
1/2 teaspoon bicarbonate soda
2 tablespoons boiling water

Method:
Combine dry ingredients
Melt butter and golden syrup together in saucepan
In seperate cup add bicarb soda to water
Add to golden syrup mixture
Add mixture to dry ingredients and mix together
Take teaspoon fulls of mixture and place on greased tray
Allow room for spreading
Cook in slow oven for twenty minutes
Loosen while warm and place on rack to cool off

Serving Suggestion: Don't eat them straight out of the oven - Give them a couple of minutes they will taste much better

And they taste great with a nice cup of billy tea.

For the story behind it -

Cheers and beers from down under,

1      cup sugar
2      whole eggs
2      egg yolks
4 1/2      cups sifted flour

FPRIVATE "TYPE=PICT;ALT=**" These cookies came out o.k. I just found them a little too crumbly and kind of tasteless. (no offense) I guess it's because I'm Cajun and not Swedish though. — Nov 8, 2003

These were pretty good cookies, although they didnt come out of my press very well...also a first time using a press, so maybe I dont know how to use them either, but I added another 3/4-1 cup flour (which still didnt help it come out any easier), and they were SO good. They were gone before I had the other batch in the oven, and by the 3rd batch everyone was just eating them cuz they tasted good. LOL Thanks for the recipe! — Oct 14, 2002, 1 member found this helpful

Idiots:

You roll them into a roll like cookie dough and   stick them in the refrigerator.
Then you can slice the things into ovals or whatever turns you on.... My Grandmother did anyway. They
have to be carefully watched. They are supposed to be light. Some colored sugar
frosting is all you need. They are deadly but pretty damn good. The almond extract, etc.
is imperative.  I often make for the holidays. Fun.

Mel,

Here is a recipe that my mom and I usually make a couple of weeks before Christmas every year.

Pfefferneusse
German
      Yield: 84 Cookies

    1/2 c  Molasses
    1/2 c  Lt. corn syrup
    1/4 lb Lt. brown sugar
    1/2 c  Margarine or butter
    1/2 ts Cinnamon
    1/2 ts Crushed anise seed
    1/4 ts Allspice
    1/4 ts Black pepper
      1    Egg, well beaten
  3 1/2 c  Flour
  1 1/2 ts Baking powder
  1 1/2 ts Baking powder

In a small saucepan over low heat, mix first 4 ingredients until blended. Remove from heat and allow to cool, then stir in spices.

Stir in egg. Pour into very large non-metallic bowl.

Sift together dry ingredients and add, in fourths, to liquid mixture,  mixing well after each addition. (Dough will be VERY stiff.)
Cover dough with plastic wrap and allow to stand over night at room  temperature to blend flavors.

Preheat oven to 350. Shape dough into 1 inch balls and place on ungreased cookie sheet.

Bake about 12 minutes, or until bottoms are lightly browned. Cool momentarily on sheets, then remove to cooling  rack.  (Cookies will stick to baking sheet, so use a firm hand on the spatula when removing.)

While still hot, shake in powdered sugar to coat.  (I used about 1/2 C. of sugar for the whole batch.)  Store in  covered containers with piece of orange or apple peel for several  weeks to mellow.  (Change peel every third day or so.)  Although, we used to eat them right out of the oven.. .either way they are tasty.

Makes 84-106  cookies, depending on size.   If you end up with less than 84, the balls of dough are too large and the centers won't bake through.)

Theoretically, this is the way these cookies are made in the Baden region of Germany, which is a bit  different from other variants of these cookies. Most people generally
let them mellow 3-4 weeks before eating.  Don't store them in tins or glass -- they end up with an odd taste. Stoneware or ceramic storage containers seem to work best.

I'm at home on the range myself but I could really use a bit of a hand just now.  I have five very large presentation cakes to have ready within 24 hours - all in the school colours of course.

No worries there, it's all in being prepared and the tray-sponges themselves have been sitting merrily in one of my freezers for weeks.

It just never crossed my mind that the Papuan bloke who helps me out on barge days would put two cartons of frozen chicken on the chocolate cakes and a carton of best rump on the vanilla.

Help!!!

Awesome recipes everyone!  I've already printed them out for next years batch as I'm almost done with this years.

Here's what I made this morning and O.M.G....

Gramma's Christmas Fudge [smiley=inlove.gif]

4 1/2 c. sugar
1/2 lb. butter
1 lg. can evaporated milk
3 lg. pkg. Nestles chocolate chips
1 lg. jar marshmallow whip

Combine 4 1/2 cups sugar, 1/2 lb. butter and 1 large can  evaporated milk in deep sauce pan.  Bring to a rolling boil for 9 full minutes.  (Make sure the sugar doesn't burn).  Remove from heat and add 3 packages of chocolate chips, and 1 large jar of marshmallow whip.  Beat with wooden spoon and pour into large greased pan.  Makes 5 pounds. ;;D

Yummy Yummy in my tummy best/easiest/kids can make them truffles ever....
I 12 oz. can eagle brand milk
1 14 oz bag of nestle choc. chips.
1 tsp vanilla- or rum flavoring, or your favorite liqueur- Grand Marnier is good :)

Melt all together over LOW heat on stove top, stirring until choc. is completely melted.   remove from heat and stir up well until completely blended.  stick it in the fridge until chocolate mix is just hard enough to roll into balls  without completely gooping up your hands-  there will be some "meltage" regardless-  make sure the kids don't eat it all up
Roll into 3/4 to 1 inch size balls and then roll in various sprinkles, coconut, finely chopped nuts, cocoa powder- whatever you want.    Keep refrigerated until they are all gobbled up.
Makes a really quick and easy gift- last minute tray to take to a party- and you can make more just before Christmas for your own trays because you kept sneaking into the fridge to try "just one more".
If you want to get real fancy, you can also "dip" them in chocolate of the candy coating variety.
I have also made these in a real hurry, and piped them while still relatively warm using a pastry tip, and pressed a peanut or an almond sliver into the top of the design.     Still just as yummy.

Happy chocolate dreams :)
