How's this for trivial question of the week!

My 5 year old (known by many as The Git) is asking for meat loaf for tea having seen Bart and Homer Simpson eat it.

Anyone there have a good recipe (we don't really eat it here) which a very fussy eater would like i.e. no outrageous ingredients?

The way my kiddos eat it and I cook it is this.....
one pound of lean ground beef
Half pound of Sausage
two eggs
Half of a thing of crackers. measurement of a thing....one of the tube type with a single row of crackers..dont know what it is called so i call it a thing.
Mix all together make the loaf bake in oven at about 350 degrees. coat with katchup while cooking make sure it is done. serve it up...if they dont like it there is always a Mcdonalds open somewhere.

Every time I try to make it, it comes out lousy, so I have given up!

I usually just do this.. a quickie one:

1 lb of ground beef
1 egg
1/2 cup of bread crumbs
different seasonings : salt/pepper/onion salt/garlic salt/oregano (you can use whatever you like, even the little packets at the store that say: meatloaf seasoning)
mix it all together
put it in loaf pan ( you can coat it w/ketchup, maybe put some bacon on top or like johnny said mix some cheese w/it)
bake at 350 for 1/2 hour (just check and make sure is done)

wahla!

cracker....hmmmm lets see it is flat very flat...square, baked in a oven has salt on it goes with soup...that is the best way i can describe a cracker

On this episode of the Simpsons, they hated the meatloaf so much they went out for sushi, so I've no idea why my son wants to try it as it didn't get a good recommendation!

I haven't posted my meatloaf recipe in a long time:

Chisel out enough room in the microwave for your thawed beefalo; the stuff in back, not the package from 1998, leave in plastic tray. Mix with Hamburger Helper, onion sticks, and Ketchup enhanced green tomato paste. Toss in some fake salt and Bacon Bits if you wanna go nuts.

Pound on the microwave key pad to see if you can set the timer. You probably can't so forget this step. Head for the couch, pop in one of your Celebrity Poker videos and relax. When the smoke alarm goes off, it's done.

After you've satisfied your neighbors and the fire trucks have gone, take out the meatloaf. I usually find that it's a bit easier to separate the melted plastic from the meatloaf if you run it under cold water.

Poke around in the cupboard for an unprententious wine cooler, grab your Ron Popiel's electric knife, set up your TV tray, select one of your C-SPAN book tour videos and enjoy.  

Serves one...only once, so far.

I like to add an onion soup mix (dry) as seasoning. A little steak sauce (A1 or Heinz 57) goes well, also.

Nani......ya prick(ette)......no fair telling the unrepentant about the onion soup mix. Shit.
Wendy.......crackers are white people. You English don't sell them. Use bread crumbs. If you don't have bread crumbs, haggis is a good substitue.
Hell, if you can't get ground meat, mayhaps a nice lentil loaf is in order.

As gross as it sounds meatloaf can really be good if done rite......esp with tons of ketchup on it !! There is actually some mixes out in the 'dry mix section' in the grocery stores (well here at least) for makeing it. You know....where the dry packages of gravy and taco sauce and sloppy joe mixes and buffalo wings are. The onion soup dry mix added is GOOD GOOD GOOD. Thanks everyone, the child in question, who I have been forcing to go to school for the last two days when he was crying and saying he had a headache and felt ill has just sprouted a body full of pox spots (boy, do I feel guilty!)

The good news is that not only does he now feel better (despite us losing count of the spots at 50!) but he is on an antihistamine, which as I remember when an undiagnosed CH'er being given Pizotifen, gives you a raging hunger!

That means that however bad my meat loaf is tonight, he should eat it! Hope it is good for chicken pox.

I LOVE a good meatloaf! But you got your "Good" loaf and then you got yer "BAD" loaf ... when it's done right it's one of my favorite comfort foods. When I'm on the road traveling I like to find "mom & pop" diners/cafes to eat at ... If it's breakfast time I sample their biscuits and gravy, lunch or dinner I go for the meatloaf if available. I've had some meatloaf that sent me to seventh heaven ... and some that sent me to the seventeenth level of Hell!  :P

Thank God for good mashers and lotsa ketchup; they can make up for even the most mediocre loaf. Ground Round (not chuck or ground sirloin) makes the best loaf imho.

The onion soup thing is a must.

BBQ sauce works better in place of the ketchup.

Gotta use greasy, fatty hamburger meat for the right touch.

BTW: I thought this post was going to be about an irritating singer from the 80s.

Give it a try once with Liptons Beefy Mushroom soup mix instead of the onion mix.  NO katsup damn it..that ruins the flavor...maybe a little worshestershire sauce and butter bushed over it, but nix on the katsup....

My guys love my meat loaf. Its easy to make and works great for meat loaf sandwiches the next day.
With 4 men in the house I use more meat then most so here goes.............
2 lbs of ground meat
1 egg
cracker crumbs ( I just use what I have in the house)
dry onion soup mix.
spices of what ever you like
Sause the top with A-1 or anyother you prefer
Bake at 350 for about an hour or till done.
Just before its done I add some cheese if I feel froggy.
(The craker crumbs help hold it together)
Leesa, that makes good meat loaf as long as I dont microwave it that is. LMAO
And YES Ueli, Alan always joked about his wifes meat loaf being so bad you could use at a door stop or boat anchor! LMAO I miss him!!

I had forgotten about that! I've been running through which children he had been in contact with and warning the Mums but hadn't got round to thinking of everyone yet as it only happened today.
I'm afraid he would have been violently infectious when you came SORRY, SORRY, SORRY!

The final instalment on the most trivial thread of all time!

I made the meatloaf but had to make it with store cupboard ingredients as kid was too sick to leave and go shopping so.......

Used crushed Matzos instead of crackers (nearest thing I had)
Used Knorr French Onion packet soup as it was all I had
Used fried up streaky bacon and onions and lean minced beef.
Chucked in some herbs and ketchup and some crumbled up cheese and two beaten eggs and seasoning.
Cooked it for an hour in a lowish oven, turned it out and inverted it and browned it all over in a hotter oven.

and

amazingly it was really tasty!

Bloody kid hated it though  >:(

Good meatloaf is heavenly - bad meatloaf is just that - bad.

Here's a recipe site with several meatloaf recipes that sound good:

I'm going to be trying this one soon:

Finnish Meat Loaf

4 T. (1/2 stick) butter

1 C. chopped mushrooms

1/2 C. chopped onion

1 1/2 lbs. ground beef

1/2 lb. ground pork

1/2 lb. ground veal

1/2 lb. ground ham

1/4 C. minced parsley

Freshly ground pepper to taste

1 C. grated Gruyere cheese

1/2 C. heavy cream or milk

Sour cream, optional

Preheat oven to 350 degrees. Saute chopped mushrooms and onion in the butter over medium heat until the onion is soft, about 5 minutes. Add the cooked mixture to the remaining ingredients, reserving 1/4 cup of the cheese for the top. Mix together and press into a 9- by 5-inch loaf pan. Sprinkle the top with reserved cheese.

Bake meatloaf for an hour. Let rest for about 10 minutes, slice and serve with a dollop of sour cream.

Damn... I need to spend more time online... Could've given ya a few more ideas...

Mom's meatloaf (loved this when I was a kid):
2 lbs hamburger (ground beef, ground chuck, ground moose, whatever)
2 large eggs
1/2 cup crushed crackers (approximate... Saltine or Ritz... Or you can use bread crumbs or even crushed croutons if you prefer)
2 Tbsp brown sugar (to taste)
Season with salt and pepper to taste
Cover with a thin layer of ketchup or bbq sauce and bake in a loaf pan until done through.

Wife's meatloaf:
1 lb hamburger (ground chuck or lean ground beef is best)
1 lb ground pork (lightly seasoned sweet italian sausage works too)
2 large eggs
1/2 cup crushed saltine crackers
1 onion soup packet
Season with salt and pepper to taste
Cover with a thin layer of ketchup/bbq sauce/steak sauce (it's all good) and bake in a loaf pan until done through.

Mexican meatloaf:
2 lbs hamburger
2 large eggs
1/2 cup salsa (the thicker salsas are better)
1/2 cup crushed tortilla chips
taco seasoning (to taste... Normally one packet or about 2 Tbsp is good)
Cover with a layer of salsa and bake in a loaf pan until done through.

Of course... You can experiment with any of these recipes... I have added diced onions, diced bell pepper, and a hint of worcheshire sauce to the wife's recipe... A bit of shredded cheddar cheese is good in the mexican recipe... That's best part about meatloaf... Makin' it your own (That's prolly also the reason why restaurants rarely make it right)
