You non-Canadians would be well-advised to carry travellers cheques and not a lot of American (or Italian) cash.  Cash your traveller's cheques at the hotel or a bank - you'll get the right exchange rate there.
Convenience stores, etc. are variable in how they handle foreign currency.

Also Margi...so my co workers say (the ones that go to Canada frequently) the very best exchange rate is when you use your VISA.
