Another boring recipe thread......

I need to know how everyone that sent in recipes wants their name to appear. I'm planning to list the name with the screen name underneath. If you prefer to remain incognito, that’s ok…just let me know. But, I need everyone to send me their names. I’ve got most of the first names…but, I’m sadly lacking for last ones. ‘preciate it! Tracey ;D oh yeah……still need MORE RECIPES. Ya'll might as well send them....I'm just gonna keep bugging ya till I get them...... ;D

TURNING CHEAP RED WINE, INTO AN IMPRESSIVE, SURE TO GET YOU LAID, RICH, MIXED BERRY, WARM DESSERT SAUCE Everyone makes a sauce for the entree, no one makes a sauce for desert. I really don’t know recipes, I cook like I party, by the seat of my pants. I invented this one night out of desperation, and used it over some cheese blintzes I had in the freezer, for a dessert course. Killer. I also see it working with Hagen Das Vanilla. This one seems to be foolproof (just don’t scorch the wine). Do it once and you can figure out your proportions. In essence, we are going to reduce down a bunch of red wine (simmer it on low heat until it condenses) then add dried mixed berries, they reconstitute and swell up filled with the condensed red wine (most of the alcohol is cooked off, but not all. This is not for Clusterheads In Cycle. Chronics?…well, it’s your call…… like that’s ever stopped you before). Use decent, cheap red wine. I use “Peter Vella” 5 liter box wine, either Cabernet Sauvignon (preferred) or Burgundy (cheaper). This is the wine that I always have around the house. 5 liters @ $7-10 is a steal for an easy drinking red. I like it for it’s lack of oakiness, the flavor of burnt wood (especially in a cheap wine) is not conducive to my cooking or drinking. The Mylar bladder inside the box, collapses as the wine is used, so that no oxygen gets in to spoil the wine, it lasts a long time. “Peter Vella” is made by Gallo, so it should be available everywhere. Gallo knows how to make good cheap red wine. I’m drinking the Cab right now. Stash a couple of boxes in your Earthquake/Disaster/Terrorism/Survival pantry, they don’t break, unlike all other wine containers, i.e. glass. Take a 2-quart sauce pan, fill it 3-4 inches high with cheap red wine. Simmer on LOWEST heat until the wine shows heavier consistency or evaporates by three-forths or more, stir every once in a while, and don’t forget about it, it can scorch. Take a typical snack bag of dried mixed dark berries or pieces (Sunkist, Dole etc) add some to the wine reduction, simmer some more. These dried berries have either added sugar, or their own natural sugars condensed by drying, in such quantities that they sweeten the wine, while adding the berry flavors. Plus, they plump up like they were fresh, but they plump up with the red wine inside them. Keep adding berries or chocolate or nuts, until it tastes groovy. (By the way, neither soy sauce or balsamic vinegar work well in this sauce). Let it cool off a bit, if you want, and use it as a sauce over all kinds of desserts. Can you say “bitter sweet chocolate torte”? David J.
