Sockeye Salmon grilled over alder wood coals served on top of toasted whole wheat bread topped with cream cheese mixed with fresh chopped dill, lemons juice & garlic then topped with fresh sliced tomatoes and all covered with slices of sharp Tilamook Cheddar then grilled under a broiler until the cheese melts. Served with a crisp young chablis Sorry... no chance for a photo... Next time... Tomorrow is grilled chicken topped with grasshopper spit pesto (fresh cilantro, flat leaf parsley, sweet basil, and mint buzzed up with EVOO, lemon juice, garlic, pine nuts, and a pinch of salt.)

Tonight we had Grilled Tuna with a mustard/champagne glaze. Mashed Cauliflower made with Smart Balance instead of butter and low fat yogurt. Brown rice with a blend of herbs and spices with sweet peas. Desert was a melon/fruit medley with toasted almonds, walnuts, ground flax seed and lowfat yogurt. with warm regards, Tony
