....but do any other Wisconsinites believe that actual authentic Bratwurst are sold anywhere NEAR Chandler AZ? I'm a member of a "foodie" forum, and some dude in AZ is wondering how to keep his brats from exploding on his grill. Brat cooking is an art and a science, in all places but WI it seems. Am I just being Brat egocentric? Am I blind to the idea that other states can actually produce an authentic Brat?

Thanks Steph. We will try that. What luck, I happen to have beer in the frig. Our Brats always split on us. We heard this from a Nascar pre-race. Quote: "From the hot tub to the grill" and now that makes sense.

Here is the Brat Science. No water Steph..just doeesn't quite make the flavor. Take 1 large yellow onion and peel. Cut into 1 inch chunks. Place frozen seperated brats into a dutch oven and pour enough cold beer of your choice, (I prefer a dark or amber beer) to cover brats by about 2 inches and toss in the onions. Set this cold pot on a burner and turn onto med high heat, and when it finally boils, let boil for 3 minutes. take off the heat and set aside for 30 to 45 minutes. There will some gray foamy scum on top but ignore that. Get your grill warm, not hot. Charcoal, let the coals get past white hot, a gas grill set to low. The brats are cooked internally and now you are just browning them off. If your Brats explode, the heat is too high. Par boiling them in the beer and onions imparts a great flavor, and ensures, (if you keep the heat low) that they won't be dry and rubbery) and that they are cooked through to be safe. My favorite way to eat Brats is with hot caraway saurkraut, raw onions and a hot brown mustard. Whole wheat Brat buns is a bonus too. edit to add: adding water to the par boil, for some reason, leaches out more of the juices and tends to turn out dryer brats. Not sure if it's the clorine salts in public water systems or what. But there is much more fat (thus flavor) floating on the top. No one ever said they were a health food, but DAYMN they taste good.

I watched some of the Brewer's spring training games in Arizona and they had brats at the ball park. Spectators were saying that was the only place they could get a good brat in Arizona - probably shipped in from here! I buy the local butcher shop's award winning Sheboygan brats. They are pre-cooked and extra-ordinarily delicious. Looks like I have dinner planned for tomorrow night!

Well the guy did say they were Johnsonville Brats. I asked him to look at the package to see if it was a WI packaging or some other minor repackager. He said WI, so I posted the "WI" way to grill brats. We'll see if he posts a responce. I like this "foodie" forum. I have gotten some good tips and have learned about some herb blends I'd not thought of before. Well worth the time to sort through eons of repeate posts to get to the gold.

| Yeah maybe, but I'd burn up $10 in gas driving across the county to get to Ray's! Karl's is less than two miles from my house! Not only are their Sheboygan's delicious, but they have a meat case to die for. Whenever I'm stumped as to what to make for dinner I stop in and gaze longingly at all the delicious entrees in the case. We always end up with something good! I'm very lucky to live so close! And during the summer from 10am - 2pm they grill the brats outside and serve with chips and a soda for very cheap!
