Easter foods - what are you having?

Easter is here. Traditionally Finns eat lamb with potatoes and mint sauce. We're going to cook the lamb with herbs and boiled carrots. My family had the tradition to boil some eggs at Easter's main lunch. I think we'll be doing that this year, too. Here's what the dessert will look like: It's traditional Finnish Easter treat called mämmi and it divides opinions. I dislike it with passion, Timo loves it: Timo eats mämmi with some milk and sugar. Others, like my parents, prefer to use cream instead of milk and some just add some sugar. Here's more about it: http://en.wikipedia.org/wiki/M%C3%A4mmi I'd prefer chocolate eggs to be honest... Sanna - Don't take this personally, but that shit looks disgusting! We're still talking about what we're going to have - either ham or turkey. And if I get any sensation of taste or smell back by then, maybe I can convince my bride to make one of her delicious lemon poppy seed tortes. Certainly not Mammi. It looks like the stuff I throw away after the primary fermentation of a batch of beer.

Paul my love then you need to come here! I'm cooking Roast Lamb with onion sauce and also mint sauce (cos I want both!) Roast Potatoes, Mashed potatoes, carrots with grand marnier, The Usual Parsnips LOL (and the last of that maple syrup you bought me in Lake Placid) Asparagus wrapped in bacon and Green Beans a la greque. For pudding I shall make a trifle 'cos it's traditional in my house. Saturday night I'm having friends round and I'm cooking Stifado (remember the beef stuff I did at Lisa's) ollowed by Shimali which is a greek cake. I'll be sure and post pictures!

Sanna, I'm with Brew on that dessert. The description alone is enough to turn me off! I'll stick with my apple pie for dessert. Charlotte Originally mämmi was eaten during lent. Its laxative properties were associated with purification and purging. As the dish keeps well for several days, it was also a convenient food for Good Friday, when cooking was against religious custom. Nowa days it is a traditional Easter delicacy.

It's not food, but we have a winter storm warning for Friday of 10-14 inches of snow. Snow for Thanksgiving, snow for Christmas, snow for Valentine's Day, St. Patrick's Day, and now snow for Easter. Life in Wisconsin sucks right now. Ham, cheesy potatoes, some sort of vegetables, and a poppy seed torte for poor Brew.

I think we are having ham with a bunch of sides at my grandpa's. We are making apple pie for dessert (sounds a lot better than Sanna's dessert!) and sweet potato casserole. I LOVE SWEET POTATOES!!!! But if it is warm then we are going to have potato salad instead. That is good too. My grandpa and his girlfriend are making everything else...she is an amazing cook! mmmmmmmmmmm. oooh and I need to talk my mom into making some dairy free peanut butter eggs. Don't know if we have time this year though.

We're having dark meat Turkey with gravy, Asparagus with garlic and butter sauce, corn on the cob, red potaoes in olive oil and Italian spices and apple crisp.

| From Wikipedia: Mämmi is made from water, rye flour and powdered rye malt, seasoned with dark molasses, salt and dried, powdered Seville orange peel. The mixture is then allowed to go through a slow, natural sweetening process before being baked in an oven until set. Preparation takes many hours, and after baking the mämmi is stored chilled for 3 to 4 days before being ready to eat. Sometimes mild fermentation can occur during preparation.

I bought about 20 pounds of fresh and smoked kielbasa at a great Polish grocery store here in Wilmington to take to my family at the beach this weekend but now that those plans have been cancelled, I guess John and I will be having kielbasa and sauerkraut....yummo. Hey Brew......how would I go about sending kielbasa via FedEx? My brother is jonesing for some kielbasa and asked if I could ship it to him this weekend.

If the latter, sure, just put it in a box along with some packing peanuts. The dry ice option will cost you a little more cuz it's considered a dangerous good.

I always freeze the kielbasa that I plan on taking downstate as soon as I get it home so it is all now frozen. I cut the rings into portions and put them in zip lock freezer bags. Can I get the insulated boxes at a FedEx store? Now I have to find out where to get some dry ice.....will put this on the "honey do" list this weekend. My brother, Jim and I have a running joke that I cannot go near his driveway when I visit until I show him the cooler full of kielbasa. Thanks for the help. Cyn

| No. They might have them at Kinko's, but I'm not sure. I always make my own. Go to Home Depot and buy some big sheets of one-inch styrofoam and cut 'em to fit all six sides inside the box. | Small pharmacies or butcher shops. Or look up "dry ice" in the yellow pages.

| Last Year Bill and Pat sent me some Culvers frozen custard like that. It got to me in very warm California as frozen as it could be Cyn. | Okey-dokey...Not to make fun of your cultural foods Sanna...but yuck! No wonder you thought it looked like something in the bottom of your beer while brewing Bill. On the other side of the coin though Sanna you could probably not stand some of the things we eat here either. grits, collard greens, creamed spinich, tofu wrapped in kelp, Dandelion tea, cotton candy, hot dogs, sweet potato/pumpkin pie..etc. lol

I actually hate mämmi... I've eaten it as a child, but not since then. I understand very well how people consider it to be discusting based on what it looks like. But Timo and many other Finns like it a lot. If Timo would have his way, we'd fill our freezer with frozem mämmi boxes, so that he could eat it all year round... No thanks! Back in here some magazines actually arrange mämmi tastings for tourists! It's intresting to see the look on their faces as you can imagine! But usually, the result is pretty much the same than with Finns: some like it a lot, some dislike it a lot. I actually took a tiny box of mämmi to my former landlady. She took the box and tried it, but for some reason I never heard what she thought about it... I gave her mämmi, because she was very keen on trying different foods and desserts. Otherwise, no worries, I won't be serving it! Sanna
