This is my favourite Asparagus and Crab Meat Soup Recipe By : Traditional Vietnamese recipe with French influence Serve 4 Ingredient -------- ------------ -------------------------------- 4 cups Chicken broth 1 tablespoon Plus 2 teaspoons fish sauce 1/2 teaspoon Sugar 1/4 teaspoon Salt 1 tablespoon Vegetable oil 6 Shallots -- chopped 2 Garlic cloves -- chopped 8 Ounces lump crab meat -- its best to use fresh crabmeat by boiling the crabs and pick the flesh out yourself, but if you are lazy you can buy frozen or tinned crabmeat, doesnt taste quite as good though. Freshly ground black pepper 2 tablespoons Cornstarch or arrowroot -- mixed with 2 tablespoons Cold water 1 Egg white-- lightly beaten 15 ounces White asparagus spears * 1 tablespoon Shredded coriander * cut into 1-inch sections with canning liquid reserved This soup was probably created by some homesick Frenchman. White asparagus (a French import), packed in jars or cans, is used for this recipe. If white asparagus is unavailable, use frozen or fresh asparagus (in this case, add the fresh asparagus to the broth from the very beginning and cook until tender, before adding the remaining ingredients). Combine the broth, 1 tablespoon of the fish sauce, the sugar and salt in a 3 quart soup pot. Bring to a boil. Reduce the heat and simmer. Meanwhile, heat the oil in a skillet. Add the shallots and garlic and stir-fry until aromatic. Add the crab meat, the remaining 2 teaspoons fish sauce and black pepper to taste. Stirfry over high heat for 1 minute. Set aside. Bring the soup to a boil. Add the cornstarch mixture and stir gently until the soup thickens and is clear. While the soup is actively boiling, add the egg and stir gently. Continue to stir for about 1 minute. Add the crab meat mixture and asparagus with its canning liquid; cook gently until heated through. Transfer the soup to a heated tureen. Sprinkle on the coriander and freshly ground black pepper. BON APPETIT

Tony, Wash, snap, and season a fist full of aparagus with a little lemon herb seasoning then add a few TBS of water and splash of olive oil. Roll gently in a covered microwave container. Nuc the asparagus just long enough (1 to 2 minutes max) to green up and heat the spears but not long enough make them lose their crunchy crispness. Plate up hot and serve asap. You can drizzel with a little Paul Newman's Creamy Ceasar salad dressing for a quick faux Hollandase topping. You can also chill then top with a little Gazebo Room Greek salad dressing. Coat with olive oil - sprinkle with garlic (powder or salt) and whatever other seasoning you like (I use onion powder, cilantro, and some other "secret ingregredients). Place on a cookie sheet and then in a 450-500 oven for about 5-7 minutes (uncovered). UMMM UMM Good!!!! You can serve them as a veggie dish or cut them up and put them on top of a salad or just grab them off the cookie sheet (wait till they cool or this could be a problem). But we never have any left over here and NO ONE like asparagus. Hugs BD

Helpful hint: Use a potato peeler to peel the skin off the bottom few inches when the asparagus has been harvested too late. This gets rid of the overly fibrous material that usually renders those last couple of inches inedible. Unless you like chewing on it for ten minutes.

We do something very similar, Barb. Put olive oil on a cookie sheet, sprinkle a little salt, a little garlic powder and a little cayenne pepper. Add the asparagus and a handful of pecans and roll them around in the mixture to lightly coat everything. Cook in the broiler uncovered for about five to seven minutes. Even my kids who crinkle their noses at the mention of asparagus eat this. Yum!

Asparagus Quiche 1 package cresent rolls separate rolls and line one 9" pie plate spread 2 tsp of prepared mustard on crust and set aside 1 1/2 pounds of asparagus, trim and cut into half inch pieces chop 1 medium onion 1 cup of fresh sliced mushrooms 1/4 cup of butter cubed 3 eggs slightly beaten 1/2 cups shreadded Mozzarella cheese 1/2 cup fresh grated Romano cheese 1/4 cup minced fresh parsely 1/2 tsp salt 1/2 tsp pepper 1/4 tsp garlic powder 3/4 tsp McCormick Italian Seasoning Saute asparagus, onion, musrooms and butter in skillet till asparagus is crisp tender Combine remaining ingredients in a large bowl Stir in asparagus mixture Pour into crust Optional: add 4 slices of cooked bacon broken up on top Bake at 375 for 25 to 30 minutes until a knife inserted at the edge come out clean Enjoy... -Andrea- Dennis' better half

| Post that for me, Dennis... it sounds yummy. Tony, all I do with it is steam it until it's al dente, spinkle it with olive oil, garlic and balsamic vinegar, and serve at room temperature.

Here you go Nani. WARNING: This is one of those recipes that my wife heard from Giada. She heard it and then made it her own. In her typical pinch of this and dash of that style she tweaks the ingredients as she goes. No dish every tastes the same twice Sorry, no pics this time Cook 1 1/2lbs of Penne as directed and save 2 cups of pasta water Boil 2 bunches of Asparagus still tied for 5 minutes Cut Asparagus into 1/2 inch lengths Put 4-5tbs of olive oil in a pot Add 3 cloves of minced garlic Cook garlic on slow heat for 2-3 minutes - don't burn it Cube 1/2-3/4lb of smoked Mozzarela cheese Toss Penne, Asparagus and Mozzarella in with enough pasta water to make sure the pasta isn't sticky Serve with fresh grated Romano cheese Enjoy! -Andrea- (Still Dennis' better half)

That sounds great, Dennis, thanks... Andrea sounds like a great cook (great cooks don't need no steenkin' measurements). At my house, Giada is known as "spageeeti girl". I grew up with Italians and never heard one say "spageeeti", LOL. She kinda bugs me so the hubs watches her and reports good sounding stuff. I'll be eating this soon.

A variation from Dennis's: 2lbs asparagus 1lb raw deveined shrimp 1lb penna noodles 12 oz can of chicken broth cloves of garlic grated romano cheeze 1/4 cup sun dried tomartos (spelling Helen style) olive oil Sherd the garlic ~ 2 cloves and lightly cook the shrimp and garlic in olive oil. set aside Cut the asparagus into 1" lengths and simmer them along with the sun dried tomartos which have been diced until just under cooked and thicken broth with corn starch. Meanwhile boil the noodles and drain Combine all ingreedients and reheat and serve with topping of romano. You can add leeks, mushrooms if desired to recipie. -P.

| Damn, woman. It's as easy as going to the grocery store, washing it, cutting about half an inch off the base, steaming it for a few minutes, and putting some butter and salt on it. Or use one of the above delicious-looking recipes. Not seeing the ocean is one thing. This one - you have complete control.
