Haven't started one of these threads in a while. Tonight in our house it's oven roasted boneless turkey breast. Wild rice dressing and honey cornbread. In the oven....

That dressing is super easy. Simmer wild rice in chicken stock for about 2 hours, adding more stock as liquid evaporates or is absorbed into the kernals. Cook untill the kernals pop open like popcorn and are tender. Add another 1 1/4 cups water, rubbed sage, pepper, onion flakes and dehydrated celery flakes to taste, and 1 cup instant rice. when the instant rice has absorbed most of the liquid, stir the whole sticky mess constantly till the rest of the water is releases and transfer to a buttered casserole dish and butter the top of the rice and cover and back for 15 minutes. then uncover for the last half hour of roasting your meat to get a slightly cripsy crust in the dressing. Sevrve with more butter or gravy.

| It was very good. There are 4 slices of turkey breast left, half the rice dressing and 0--yes 0 cornbread left. I got one wedge. I'm stuffed. Wait till Samhain...traditional meal with roast pork loin rubbed with herbs in caramel onions potatos and carrots, roasted nutmeg/butter squash, and baked fireside apples with brown sugar and cinnamon.

Tonights menu was chicken teryaki stir fry. My very picky 4 year old actually loves the stuff! Then we carved up 2 of the 4 pumpkins we got at the pumpkin patch today. Tomorrow, I need to cook the pie pumpkins I got and freeze them for the quickly approaching holiday season.

Well last night we had Beef Bourgignonne (Beef in Burgundy) Chicken Supreme and Rice and baby baked potatoes - but then there were 13 of us! (pics on Bingham thread) Today is just a typical Sunday dinner of Roast Lamb, yorkshire puddings, roast potatoes, roast parsnips with a maple syrup and parmesan glaze, swede, green beans and corn (cos Jasper wants it!) proper home made gravy and onion sauce as well as the ubiquitous mint sauce and we're good to go. Oh and Rice pudding for dessert but I'll make that after dinner so they can have it a couple of hours later - they wont be fit to eat it to soon LOL
