Check it out, it's really very easy to make and beings I'm not a huge banana person, I found them moist, flavorful and just delicious! Here's the recipe...
BANANA CHIP SQUARES
3/4 c. butter or margarine, softened
2/3 c. sugar
2/3 c. packed brown sugar
1 egg
1 tsp. vanilla
3 or 4 mashed ripe bananas (I used 4)
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
1 c. chocolate chips (I used Ghiradelli Bittersweet)
Cream butter and sugars until fluffy. Add egg and vanilla, beat well. Stir in bananas. Sift together flour, baking powder and salt. Add to creamed mixture. Beat well. Stir in chocolate chips. Spread in greasted 15 1/2 x 10 1/2 baking pan. Bake at 350 degrees for 25 minutes. Cool and cut into bars. Makes 36 squares.

OMG........  I am in heaven. Banana chip bars, frozen custard and cheese curds. I'm gaining weight just thinking about them. Oregon has a lot of Dairys and I never go through that state without getting the cheese curds and feeling like little miss muffet.
