NEED HELP!!!! Cajun / Creole food and beer

Hi Heard so often about (and had some many year ago) crawfish ettufee, seafood gumbo, Mudpuppie, Oh and I think it was called bluecarab staffed merliton. Only the sound of the name “Cajun / Creole food” and not the one you get in fancy restaurants makes me drool. or just a good (bitter)coffee with chicory and benjes for breakfast sends my mouth Into a stream of Drool. So I decided to try and make some or all of the above over the coming week ( I have 4 days Off) But don’t know how to make them, looked on the net…. The recopies there didn’t sound to good or are based on stuff I can’t get in Switzerland (ready made mixes), I depend on your help!! Redd, Gator, Drk^Angel (ref. the orginal Cajun food and beer), and other HELP!!!! Promises to let you know how it came out............ If I survive my own cooking...... (and no I will not start a new habit.... household..... It could trigger a CH) Oh and almost forgot (Quote) “it was the beer!! I dated a guy who was the Executive Chef at a Cajun/Creole place. Go figure, the guy was half Italian and half Mexican, so I learned quite a bit from this guy. The secret to a good gumbo or jambalia is the roux. I'll check back here after work and see what others have posted for ya. Gator, from what I hear is a fine cook. He'll help I'm sure. Pegg

I've had one day off since April last year (Christmas) but today seemed like an annual vacation in that I worked only seven hours. Treat myself to an early night, my time, and all hell breaks loose as my computer-alarms start lifting the lid off my house. "ALERT!! ALERT!! THIS IS NOT A DRILL!! CLUSTER-BUDDY IN TROUBLE. 'BEER' MENTIONED IN THREAD TITLE!!!" I sit here naked (our ladies may care to turn their backs before reading further) but ever ready fight the good fight and, as the great god DJ decreed, be here to help another while it's humanly possible. To the piffy trifling stuff first. This is a link sent to me yonks back by His Royal Zaniness, an Englishman but otherwise a decent bloke, and I've found it to be beaut because it's written for people like myself who really care about food but don't have the knowlege or skills of qualified chefs. http://www.cooks.com/ The search facility is really good in that I just typed in 'Creole' and within .34 seconds it gave me 1,600 recipes, many of which I'd be quite capable of doing even my very limited access to unusual ingredients (next barge is due in a fortnight). But now to the serious stuff. Did you know that dish-washing detergent is a proven trigger to 99.347% of male CHeads? (I still wonder about Chewy.) And to beer, the reason this all started and why the 60 Minutes camera crew is still camped on the front lawn trying to learn the reason for all the alarms and flashing lights. Here in Oz we pretty much have two distinct tastes in that brew from the heavens. Those droplets reminiscent of an angel urinating on your tonge. Many people choose the maltier style of which Fourex (XXXX) is a good example and, yes, we've heard all the gags about how it got its name. Others prefer a sweeter, less hoppy, style for which Fosters is rightfully renowned. But never the twain would meet, one or the other or daggers drawn and may the best man get the last tinnie. All this while there was a perfectly good brew to suit both tastes but it wasn't 'discovered' until about 15 years ago (long, long after I started drinking it and being laughed at by mates). It's called Victoria Bitter, or just VB, and is generally held to be perfectly quaffable by all beer drinkers regardless their personal preference. http://www.fosters.com.au/enjoy/beer/victoria_bitter.htm I also have it on good authority that besides curing CH it's also good for coughs, colds, scabby holes, arched feet, moles on the back, clogged down-pipes and will even make women look more beautiful until morning. Otherwise, I've turned off all the alarms. Police have left though some of the press are still hanging around and the neighbours look a little annoyed but I have fulfilled my charter as a member of this wonderful place. Wild, I think ya gotta be born in Southern LA to cook creole right. At least that's why my uncle from Baton Rouge tells me. I tried gumbo ONCE and it came out really good - I never tried improving on it..... I just let everyone talk about how good I made gumbo . Good luck.... Hugs BD

| Sorry, cant help it, but was born in the "holyland" and that is about 5000 or more from Southern LA, and live in Switzerland (the trugh land of Milk and h(m)ony) but for tomorow I will make a "BarbaraD - Southern LA Styel" Gumbo !! BD need the Recepie Michael

You can do this in a stock pot, but I use a slow cooker (crockpot). I modified it due to my families tastes (we arn't big on using whole tomatoes), but the rest is from my crockpot cookbook. I love it! Jambalaya-Style Chicken & Shrimp 1 cup sliced celery 1 large onion, chopped 1 can tomato soup (or 1 can cut-up tomatoes) 1 small can tomato sauce (or 1/2 small can tomato paste) 1 tablespoon Worcestershire sauce 1 pound skinless, boneless chicken breast halves or thighs, cut into 3/4 inch pieces 1 recipe Homemade cajun seasoning (what I use and it's posted below) or 1 1/2 teaspoons store bought Cajun seasoning 1 1/2 cups instant rice 8 ounces cooked peeled, deveined shrimp 3/4 cup chopped green sweet pepper 1. In a 3 1/2 to 4 quart slow cooker combine celery, onion, tomato soup, tomato sauce, Worcestershire sauce and Cajun seasoning. Stir in chicken. 2. Cover and cook on low-heat setting for 5 to 6 hours or on high-heat setting for 2 1/2 to 3 hours. Stir in rice, shrimp and sweet pepper. Cover and let stand 10 to 15 minutes or until most of the liquid is absorbed and rice is tender. Homemade Cajun Seasoning: In a small bowl combine... 1/4 teaspoon white pepper 1/4 teaspoon garlic powder 1/4 teaspoon onion powder 1/4 teaspoon ground red pepper 1/4 teaspoon paprika 1/4 teaspoon black pepper

Justin Wilson’s Sweet Potato Pie Recipe Ingredients: 1 1/2 C. mashed boiled sweet potatoes 1/2 C. honey 1 tsp. ground cinnamon 1/2 tsp. salt 3 large eggs 1/2 C. sugar 1 tsp. vanilla extract 1 C. pecan pieces or whole pecans (optional) NOT optional in MY house. 1 - 9 inch deep dish unbaked pie shell Directions: Preheat oven to 350 F. Mix sweet potatoes, honey, cinnamon, and salt together in a large mixing bowl. In a separate bowl, beat the eggs, then gradually beat in sugar and vanilla. Pour the eggs into the potato mixture and mix well. Add pecans, if desired, and pour into pie shell. Bake 1 hour or until a knife inserted into center comes out clean.

Garlic Salt 1/2 Teas. Paprika 1/4 Teas. Pepper 1/4 Teas. Cayenne Pepper ---------------------------------------------------------------------- 1-1/2 pounds bonless skinless chicken breasts, cut into 1/2 inch strips. (Increase above ingriedients for poundage). Place chicken strips in bag to coat well. 2TBLS. Butter or Margarine Fry strips in butter for 8-10 minutes turning once.
