... pror to serving would be my guess depending on how finely you cut up the taters and carrots. Let's see if I'm right.  Ladies, Chefs?

well, potatoes usually take about 30 minutes to cook if cut in quarters, and I have found they take the longest to cook out of the other veg's, so you could go from there.  Undecided

Good God Don, don't you own a freaking cookbook???

According to my CD "Easy Chef's One Million Recipe's", for a 2lb pork shoulder it should be boiled for 1 1/2 hours for a stew, so I would imagine it should be 2 1/2-3hrs for a 3.5 lb?

Ok, Chewy.....I may be on the wrong coast, but New England boiled dinner is a fave around here.... minus the parsnips.thankewveryymuch........
I generally use a pork shoulder........3-4#,  I cook it in lightly salted water 2-2.5 hrs, at which point I dump the veggies in and cook another 45 mins.......CEPT the cabbage.that goes in VERY last....only needs about 5 mins to wilt and look awful-which is when it's ready.

Now, ya gonna make it with cornbread??? HMM??? Ya gotta man!!!
Go get some Marie Callendar's mix.......

BTW-remember to add a bit of pepper before serving.and RIGHT NOW, add sage.......and some thyme........some marjoram, too........to enhance the flavor, of course!!!!!!

Cathi

As my son would say, "Chewy's grubbin bigtime tonight!!"..........ENJOY!

1 pound boneless lean pork shoulder
1 large onion, chopped
1 teaspoon dried basil
1 teaspoon dried rosemary
2 cups water
3 medium carrots, sliced
1 large green bell pepper, cut into 1 inch pieces
3 cups mushrooms, halved
1/2 cup burgundy wine
1 (8 ounce) can tomato sauce
Trim any excess fat from pork shoulder and cut into 1-inch cubes. Spray a large soup pot (or Dutch oven) with nonstick cooking spray and heat over medium heat until hot. Add pork and cook over medium heat until brown. Stir in onion, basil, rosemary and water and heat to boiling. Reduce heat, cover and simmer about 1 hour or until pork is almost tender. Add remaining ingredients, cover and simmer about 30 minutes or until vegetables are tender, stirring occasionally.

Makes 6 Servings
Serving Size: 12 ounces

You're boiling a bone-in pork shoulder? All the bone marrow is going to ooze out of the bone and screw up the taste of everything.

Hope this helps  Grin
