Somebody help!!! I need a simple recipe for ice cream for an electric freezer. The ones that came with the freezer aren't right for some reason. anyone got a good (easy) one please HELP me. Gotta 3 year old that wants Granny to make him some ice cream NOW! (the kid has about as much patience as Granny does.) Hugs BD

Here are two vanilla ice cream recipes.. I hope they help! I have loads of others if you decide you LIKE making ice cream! Ingredients: 4 egg yolks 1/2 pint (250ml) milk 1/2 pint (250ml) double/heavy cream 4 oz (100g) sugar 2 teaspoons vanilla extract (or according to taste - everyone's different!) First of all scald the milk (bring slowly up to boiling point in a saucepan). Separately, mix together the egg yolks and sugar until thick. Pour into this the hot milk, whilst continuously stirring. Then pour the mixture back into the pan and heat gently, stirring until the custard thickens - DO NOT BRING TO THE BOIL OR IT WILL PROBABLY CURDLE. Trust me.. I know this!!! When you can see a film form over the back of your spoon it's time to remove the saucepan from the heat. Leave to cool. This is the base and when it is cold, stir in the cream and vanilla extract, then transfer the whole mixture into an ice cream maker and freeze according to the manufacturer's instructions. The next recipe is still vanilla but its quicker.. like a cheat recipe if you like 1/2 pint (250ml) single/light cream 1 small tin of condensed milk 1-2 teaspoons vanilla extract (according to taste) Pour all ingredients into a mixing bowl and mix until smooth. Transfer the whole mixture into an ice cream maker and freeze according to the manufacturer's instructions. Have fun!!

| Hi there, be carefull when doing this, The yolk will not coagulate until it reaches a temperature of 62° Celcius, when the milk is hotter it will.

Or you could add one tablespoon of hot milk to the egg/sugar mix and stir it in before adding another and keep doing this until the egg/sugar mix is warm. THEN add it to the hot milk. This works for custards and Creme Anglaise too. I also use a double boiler to prevent the mix from over-heating and curdling or splitting. (Yuck. I've even seen split sauces in restaurants!) Sounds like a good recipe, that top one Helen. Might just have to try that. Thanks!

I know.. I used to get the hjortronsylt in Sweden.. and the lakka come to think of it! I got given a box of liqueur chocs there once filled with Lakka.. OH MY GOD!!! They were absolutely gorgeous. I've never seen them since and I'm not wholly convinced I didn't dream them up!! If ever you see them you have GOT to try them.. yummmmmm!!

| Knew I could count on you Don..... simple, easy and everyone's happy. When my son was little, I used to take Oreo's out of the package (and hide the package), place them on a cookie sheet, put in oven on very low. When his friends came over we had "homemade" Oreos. After he got married, his wife brought home a package of Oreo's... and wouldn't you know it -- my darling son said, "Mom ALWAYS made homemade Oreo's!" That's what I call the mother-in-law's ultimate revenge! Hugs BD
