Happy Turkey Day - and don't forget to brine it!

Wishing you all a safe and peaceful Thanksgiving holiday. I'm off for a few days (hopefully, since my little corner of Michigan is under a snow advisory all day tomorrow) to see my family. On Thursday I'll be giving thanks to all of you - for the wonderful support and advice you've given me over the last few months. I'll also be eating the best d.....ed turkey you ever had, since I'll be cooking it! If you're cooking the bird this year, I have one big piece of advice ... don't forget to brine it: 1 cup kosher salt 1 cup brown sugar 2 oranges, quartered 2 lemons, quartered 6 sprigs thyme 4 sprigs rosemary 6 leaves of sage 2 gallons cold water 1 large clean garbage bag and a cooler Dissolve salt and sugar in the cold water inside the garbage bag, inside the cooler or a large metal bucket. Add the oranges, lemons and herbs. Insert Tom Turkey breast down and keep him in a cool place all night. Turn once during that time (maybe about the time of your 1:00 am visit from the beast). Before roasting, take Tom out and rinse and dry him well. Massage him with oil or butter, place quartered onions and various herbs inside him, and roast. This method produces the moistest, most tasty turkey ever. **Please note - brining is not recommended if you are actually planning to "stuff" the turkey with stuffing. (Though most experts will tell you that stuffing the bird isn't a very good idea - slows down cooking and produces dry, tasteless meat). Enjoy the holiday. May it be PF for all! Kris

I'm not so good at cooking turkey - it takes patience and I don't have much of that. Your turkey sounds delicious though! Enjoy your day and be very careful in the snow! PFDAN- Karen

We have turkey for Christmas here and I usually cook the little begger breast down and turn him over for the last hour of cooking.. not had any complaints so far but I like your recipe better! I shall be trying it this year and I'll let you know how I got on on Boxing day! Happy Thanksgiving one and all, you have made the past couple of months of my life much richer and I'm grateful for "knowing" each and every one of you.. whatever bit of the world you are from! (Yeah.. even you Ronny!!! )

This year I am going back to how we celebrated thanksgiving during my youth. We used to all pile in the boat and sail over to St. John. Turkey day we ate Maine Lobster and spent the long weekend diving and relaxing on the beach. Can't do the boat part but steamers and Caribbean lobster are the menu.
