How's this for trivial question of the week! My 5 year old (known by many as The Git) is asking for meat loaf for tea having seen Bart and Homer Simpson eat it. Anyone there have a good recipe (we don't really eat it here) which a very fussy eater would like i.e. no outrageous ingredients? Wendy

The way my kiddos eat it and I cook it is this..... one pound of lean ground beef Half pound of Sausage two eggs Half of a thing of crackers. measurement of a thing....one of the tube type with a single row of crackers..dont know what it is called so i call it a thing. Mix all together make the loaf bake in oven at about 350 degrees. coat with katchup while cooking make sure it is done. serve it up...if they dont like it there is always a Mcdonalds open somewhere.

I usually just do this.. a quickie one: 1 lb of ground beef 1 egg 1/2 cup of bread crumbs different seasonings : salt/pepper/onion salt/garlic salt/oregano (you can use whatever you like, even the little packets at the store that say: meatloaf seasoning) mix it all together put it in loaf pan ( you can coat it w/ketchup, maybe put some bacon on top or like johnny said mix some cheese w/it) bake at 350 for 1/2 hour (just check and make sure is done) wahla!

cracker....hmmmm lets see it is flat very flat...square, baked in a oven has salt on it goes with soup...that is the best way i can describe a cracker

Ueli On this episode of the Simpsons, they hated the meatloaf so much they went out for sushi, so I've no idea why my son wants to try it as it didn't get a good recommendation! Wendy

I haven't posted my meatloaf recipe in a long time: Chisel out enough room in the microwave for your thawed beefalo; the stuff in back, not the package from 1998, leave in plastic tray. Mix with Hamburger Helper, onion sticks, and Ketchup enhanced green tomato paste. Toss in some fake salt and Bacon Bits if you wanna go nuts. Pound on the microwave key pad to see if you can set the timer. You probably can't so forget this step. Head for the couch, pop in one of your Celebrity Poker videos and relax. When the smoke alarm goes off, it's done. After you've satisfied your neighbors and the fire trucks have gone, take out the meatloaf. I usually find that it's a bit easier to separate the melted plastic from the meatloaf if you run it under cold water. Poke around in the cupboard for an unprententious wine cooler, grab your Ron Popiel's electric knife, set up your TV tray, select one of your C-SPAN book tour videos and enjoy. Serves one...only once, so far.

If you don't have bread crumbs, haggis is a good substitue. Hell, if you can't get ground meat, mayhaps a nice lentil loaf is in order. Presentation is everything, RJ

As gross as it sounds meatloaf can really be good if done rite......esp with tons of ketchup on it !! There is actually some mixes out in the 'dry mix section' in the grocery stores (well here at least) for makeing it. You know....where the dry packages of gravy and taco sauce and sloppy joe mixes and buffalo wings are. The onion soup dry mix added is GOOD GOOD GOOD. Many ways to make it......one way to eat it Pam

Thanks everyone, the child in question, who I have been forcing to go to school for the last two days when he was crying and saying he had a headache and felt ill has just sprouted a body full of pox spots (boy, do I feel guilty!) The good news is that not only does he now feel better (despite us losing count of the spots at 50!) but he is on an antihistamine, which as I remember when an undiagnosed CH'er being given Pizotifen, gives you a raging hunger! That means that however bad my meat loaf is tonight, he should eat it! Hope it is good for chicken pox. Wendy

I LOVE a good meatloaf! But you got your "Good" loaf and then you got yer "BAD" loaf ... when it's done right it's one of my favorite comfort foods. When I'm on the road traveling I like to find "mom & pop" diners/cafes to eat at ... If it's breakfast time I sample their biscuits and gravy, lunch or dinner I go for the meatloaf if available. I've had some meatloaf that sent me to seventh heaven ... and some that sent me to the seventeenth level of Hell! Thank God for good mashers and lotsa ketchup; they can make up for even the most mediocre loaf. Ground Round (not chuck or ground sirloin) makes the best loaf imho.
