If anyone likes spicy hot beanless chili..

Here's a recipe of mine...
 
Ingredients
 
1 box (12oz) elbow noodles (boiled & drained) (I use Muellers Low Carb)
2 lbs ground chuck or venison (browned, crumbled & drained)
4- 8oz cans tomato sauce
1 & 1/2 quarts tomato juice (I use homemade)
2 packets McCormick Hot chili seasoning packets
2 dashes habenero sauce
4 dashes Louisiana Hot Sauce
1 tsp Chili powder
1 tsp onion powder
1 tsp garlic powder
 
Directions
 
Mix all ingredients in large pot, bring to boil then serve.

Nice side order of steamed cabbage should do it.

Oh yeah, don't do like my hubby did and eat 2 big bowls in one day.  He was hurtin for certain... Embarassed

Here's mine:
 
Bob's Bowl of Red
 
#   3 lb Lean rough ground chuck steak
# 1 lb Lean pork shoulder
# 3 Medium onions chopped
# 1 Green Bell pepper chopped
# 1 Red Bell pepper chopped
# 8 Fresh Jalapeno peppers (2 seeded & chopped) balance gashed
# 2 Tbsp Fresh ground cumin
# 1 t All Spice
# 1 Tbsp Blackstrap molasses
# 12 oz (1 can) beer(not Lite)
# 2 oz Sour mash whiskey
# 1 oz Vietnamese hot sauce or Tabasco sauce
# 5 Cloves garlic crushed
# 3 Tbsp * masa harina (fine yellow corn meal)
# 1 Tbsp Soy sauce
# 3 Bay leaves
# 2 cup Stewed tomatoes chopped
# 1 cup Tomato sauce
# 1 cup Tomato paste
 
Saute' onions, garlic, and chopped peppers in 4 Tbsp of peanut oil or bacon grease. Add the meat & cook until browned. Add other ingredients except the cumin. Stir constantly until it reaches a boil. Boil for 3-5 minutes then lower heat and cook, stirring often. After cooking for 10 minutes add 1 Tbsp of cumin and stir it in. Cook for 1 hour on simmer then add the remaining cumin. Cook for 15 minutes more and serve!

I would make it for the hubby but I made him kielbasa the other night and thought we were both going to die - him from gas and me from, well, HIS gas!   eek  I'd have put a cork up there but I was afraid he would use it for ammunition!  Grin
 
No more spicy food up in this house until windows can be thrown wide open!

omg Kim, those are sooo yummy when I make them with sour cream, cream cheese and garlic and then bake it.  goot stuff!!  although, it'll give ya some funky toots also Tongue

Lord - you all cook too!  Where did I go wrong?  Can I adopt some of you - move you up here to Canada and have you cook for me.  Course if you do windows, it would be an added bonus!

I love Chili. I really do.  
 
Proper Chili is an art form. It takes the better part of a day to create this wonder of nature, and can't be hurried. Any measurement of ingredients is arbitrary.....don't use measuring cups, spoons or utilities. Your cooking kettle is your canvas......
 
Ingredients:
 
*Stock*
2-3 cans Tomatoes (approx 14 oz), crushed
1 pt V-8 juice (more if thinner mix desired)
8 stalks celery, 2 large onions, 6 cloves garlic, all diced and sauteed until transparent
1/4 cup honey
1/2 cup chili powder
1-5+ Tbsp cayenne pepper (to taste)
1 Tbsp white pepper
Salt - I use lots
2 Tbsp Cumin (VERY important)
2 Tbsp Thyme
10-50 Jalapeno peppers de-seeded and diced
anything else in the frig that might taste good
 
Put above ingredients in a large pot, bring to a low boil, then reduce to a bare simmmer for 4 hours, uncovered, stirring often. It should be too hot to put in your mouth just yet.
 
*Add:
1 lb cooked ground beef, or any other meat you like
1 can small white beans
1 can small red beans
1 can pink beans
anything else in the frig that might taste good
 
Continue slowly simmering and stirring for another couple hours, uncovered. You'll know it is aproaching the "Ready to Eat" stage when it no longer sets your mouth on fire. This can only be accomplished by hours of slow cooking, allowing the condiments to seep in to the beans/meat and become tempered. Any monkey can put a bunch of pepper in a pot and set your mouth on fire. This is not the case with true Chili. Although it may start off as a 5 alarm mix, by the time it has simmered all day a blending of ingredients will occur, and you get a reasonably hot dish with a rich, full bodied taste that fills the mouth with flavor, not fire.
 
The next morning is a _Whole_ `nuther story..........

Only meatloaf here:
 
I haven't posted this in some time:
 
Chisel out enough room in the microwave for your thawed beefalo; the stuff in back, not the package from 1998, leave in plastic tray. Mix with Hamburger Helper, onion sticks, and Ketchup enhanced green tomato paste. Toss in some fake salt and Bacon Bits if you wanna go nuts.
 
Pound on the microwave key pad to see if you can set the timer. You probably can't so forget this step. Head for the couch, pop in one of your Celebrity Poker videos and relax. When the smoke alarm goes off, it's done.  
 
After you've satisfied your neighbors and the fire trucks have gone, take out the meatloaf. I usually find that it's a bit easier to separate the melted plastic from the meatloaf if you run it under cold water.  
 
Poke around in the cupboard for an unprententious wine cooler, grab your Ron Popiel's electric knife, set up your TV tray, select one of your C-SPAN book tour videos and enjoy.  
 
Serves one...only once, so far.
