The way it was explained to me:
Domestic birds (chicken, turkey,etc...) used for our consumption (or otherwise) do not migrate. Their breast muscles do not get used to fly distances. Certain parts of the body of these domestic birds/fowl do not get used like wild game.
This is why ducks,geese, etc.... have no white meat. They migrate so their breast meat( & other parts) is/are also dark.
Something like that.
*Like I said, this is how it was explained to me. I have no idea if it is right or wrong.

KOP.....wow interesting....but.....does that mean duck and geese (or goose) legs are 'white' meat not dark ? I didn't know that but am tryin ta picture a white meat leg ? Course I don't eat much game or meat but will eat an occational hot dog. (yeah...go figure !!) White meat leg'd Pam

As you may or may not know (or care) I live in Vegas. The sun shines here. Always.
If you want to see white meat you should see the tourists from anywhere east of the Colorado River.
These people parade around in short pants (with white socks up to their knees). One look and you know they haven't seen the sun in months (or years).
The pasty white legs are enough to blind a person
Please. if you're coming to Vegas, get a little sun before you come. And leave the white socks at home 
That's my opinion on white meat and I'm stickin' to it.

BobG...Im coming to New York damn I wanted to wear my long white socks does this mean I shouldn't bring my hanky to tie on my head either.. ??? but don't worry I shall be using the sunbed before I fly....I suppose that means my breast meat will be dark so I won't have to tan them............. ;D
