Here's a simple recipe for one of our staple tailgating menu items. "Jimmy Wraps" from the Original Jimmy 1 lb large Shrimp or Prawns, raw, peeled and clean Several Fresh Jalapeno Peppers 1lb thinly sliced bacon Skewers To idea here is to stuff the shrimp with a spear of the jalapeno pepper and wrap it with a slice of bacon. These are cooked on the skewers on a hot grill for a few minutes on each side. Esseentially, it is finished when the bacon is fully cooked. Depending on your cooking skill, stuffing the spears into the shrimp can be a challenge. For simplicity, you can wrap the jalapeno spear with the shrimp instead of attempting to stuff it. I use the skewer to make a hole through the shrimp to shove the jalapeno spear through. Also, it helps to slightly pre-cook the bacon. This is easily done in the microwave, but I hate what the microwave does to the flavor of bacon. -Fu
